The only celebrating I've done is teaming up with |ad| @iswariireland_uk to create these CHOCOLATE CHAI MATCHA BLISS BALLS ☘. Matcha is my green dood of choice today 🍃. Am I the only Irish person not out celebrating today? . . RECIPE. . INGREDIENTS. 1 cup cashews. 1 cup desiccated coconut. 1 tsp mixed spice. 1 ½ tsp ground cinnamon. ½ tsp ground cloves. ½ tsp ground nutmeg. ¼ tsp salt. 1 tsp vanilla extract. 10 medjool dates (pitted). 4-5 tbsp Iswari cacao powder. @iswariireland_uk matcha powder to dust. INSTRUCTIONS. Blitz the cashews and coconut in your food processor until they form a light crumb consistency. Add the spices, salt, vanilla extract, dates and cacao powder and blend for a couple of minutes until the ingredients begin to stick together and form a dough. Roll the dough into bliss balls (as small or large as you like) Place some matcha powder in a bowl and roll the bliss balls in the powder to form a coating. Is there anything more satisfying than fluffy towering pancakes drowned in maple syrup? . So easy to make and no need for eggs or dairy. Simply blend 1 banana with 1 cup oat milk and 1 tbsp tahini or nut butter, a dash of vanilla extract and 2-3 tbsp maple syrup. Then whisk the wet mixture into 1 cup flour of choice and 1 tbsp baking powder. Fry in a little coconut oil. . TIP: once the pancakes start to cook underneath, instead of flipping them stick them under the grill to cook the top side! Keeps em nice and neat 👌. KEY LIME TART (where's the lime emoji?🤔). Recipe below ↓. . INGREDIENTS. BASE. 1½ cups cashews. 6 medjool dates (pitted). ¼ tsp salt. 3 tbsp maple syrup. 1 cup almond flour. 1 cup roasted buckwheat. ½ tsp almond extract. FILLING. 2½ cups cashews (soaked in water for 6 hours+drained). ⅓ cup maple syrup. 1 tsp vanilla extract. ¾ cup oat cream. 4 tbsp lime juice. 6 tbsp lime rind. 3 tbsp creamed coconut or coconut butter. ¼ tsp matcha powder. MINI MERINGUES. ½ can chickpea brine (aquafaba). ½ cup granulated sugar. ½ tsp vanilla extract. ½ tsp cream of tartar. ½ tbsp cornstarch. GARNISH. Rind of 1 lime. Fresh thyme. . INSTRUCTIONS. Add the roasted buckwheat to your food processor and blitz for a couple of minutes until roughly ground. Add the cashews and blitz for another minute or so until the texture resembles a light crumb consistency. Add the remaining base ingredients and continue to process until all the ingredients start to stick together to form a dough consistency. Press the mixture evenly into your tart tin, making sure all the edges are evenly covered. Set the base aside in the freezer to set. Meanwhile add all the filling ingredients to your blender and blitz until completely smooth and creamy. Remove the tart base from the freezer and fill with the key lime mixture (saving a cup for decorative piping). Add the remainder of the filling to a piping bag and pipe your desired design on top of the tart. Place the tart in the freezer to set for 6 hours. Meanwhile prepare the meringues by preheating your oven to 100° C. Add the aquafaba to a large bowl and beat using an electric whisk for a couple of minutes. Add the sugar and vanilla extract and whisk for a further 10 minutes until the mixture forms stiff glossy peaks. Line a baking tray with parchment paper and use a piping bag to pipe out the mixture into miniature meringues. Bake in the oven for 1.5-2 hours before removing from the oven and allowing to cool completely before use. (hold aside some meringues for decorating the tart). Once set, remove the tart from the tin and allow to defrost for one hour. Decorate with mini meringues, lime rind and thyme leaves. . Enjoy! Christina × #addictedtodates.

RECIPE. . 1½ cups cashews. 16 medjool dates (pitted). 1 tsp salt. 1 tbsp coconut sugar. 1 tbsp maca powder. Pinch of cinnamon. 1 tsp vanilla extract. 2 tbsp Tahini. 1 tbsp peanut butter. . Blitz the cashews to a ground crumb consistency in your food processor. Add the dates, salt, coconut sugar and maca powder and continue to blend for another minute or until the dates have broken down into a crumb texture also. Add the remaining ingredients and blend until everything begins to stick together to from a dough. Roll the dough into balls and coat them according to your taste. I used vegan milk chocolate, vegan strawberry chocolate, dried cranberry powder, dried pitaya powder and raw cacao powder. . Enjoy! Christina ×. #addictedtodates. . I've teamed up with @iswariireland_uk to make this super quick and easy salted caramel granola for all you breakfast lovers. Boosted with my fave maca powder which intensifies that caramel flavour 👇. . INGREDIENTS 5 tbsp coconut nectar (or maple syrup). 2 tbsp tahini. 1 tbsp peanut butter. 1 tsp vanilla extract. ½ tsp salt. 1 tbsp @iswariireland_uk maca powder. 1½ cups oatflakes. 1 cup pecan nuts. 1 cup almonds. ½ cup sesame seeds. ½ cup @iswariireland_uk Buddha’s Awakening Maca Vanilla. ½ cup coconut oil (melted). . INSTRUCTIONS. 1. Preheat your oven to 150°C. 2. Begin by making the salted caramel coating for the granola. Simply add the coconut nectar, tahini, peanut butter, vanilla extract, salt and mace powder to a bowl and stir well until smooth without lumps. Set aside while you prepare the base for the granola. 3. To a large bowl add the oatflakes, peace nuts, almonds, sesame seeds and Buddhas Awakening. Gently stir to mix everything together. 4. Add the coconut oil to the mixture and stir it through to coat the mixture as evenly as possible. 5. Next add the salted caramel to the bowl and mix well, it’s best to use your hands to ensure that you mix everything evenly. 6. Line a large baking tray with some parchment paper and spread the granola out onto the tray. 7. Bake at 150°C for 15-20 minutes, stirring half way through. 8. Allow the mixture to cool completely before serving. 9. Store in an airtight container at room temperature.
