* Chocolate lovers, are you drooling yet? . I'm so excited about this recipe! It's a dairy free "milky" chocolate that snaps, shines, melts, grates and well makes us drool and all that stuff 😜. . If you follow me over on YouTube you'll have seen my previous "milk" chocolate recipe which has a softer, more fudgey consistency than regular chocolate. So I've been researching like crazy and working really hard on developing an improved chocolate. * How about some cozy dark hot chocolate with sweet aquafaba cream to start a slow relaxing Sunday? . These were so rich and comforting! I'm currently walking in the park with pooch and dreaming of having another big mug of this when we get home! Plus I snuck in some superfoods so it's not all bad I guess lol. . SWEET AQUAFABA CREAM • I can chickpea brine (aquafaba) • 2 tsp castor sugar • 0.5 tsp vanilla extract • 1 tsp cream of tartar Use an electric whisk to mix the aquafaba and cream of tartar to soft peaks. Add the vanilla and sugar and whisk until combined. HOT CHOCOLATE • 2 cups oat milk • 1 tbsp raw cacao powder • 1 tsp coconut sugar • 1 tsp vanilla extract • 0.5 tsp ground cinnamon • 1 tsp maca powder • 1 tsp lucuma powder (optional) To make the hot chocolate simply blend the ingredients until smooth. Once blended heat in a pot until simmering. Meanwhile melt 50g dark vegan chocolate and pour into the bottom of your serving glasses. Fold a couple tablespoons of the aquafaba cream into the hot chocolate mixture before pouring it into the serving mugs/glasses. Top with aquafaba cream and more chocolate if desired. . * Happy NYE ~ Recipe Below ↓ . As 2018 comes to an end I leave you with the last recipe and my deepest gratitude for all your support throughout the past year. . I have had some amazing opportunities this year, but have also gotten to know some of the most incredible people I've ever met. THANK YOU to each and every one of YOU! . UPSIDEDOWN CRANBERRY CLEMENTINE CAKE: . Cranberry sauce • 2 cups fresh or frozen cranberries • 4 tbsp coconut sugar • 1 star anise • 1 cinnamon stick • 5 tbsp water. . Add all the ingredients to a pot and bring to a simmer. Allow the mixture to cook and reduce for about 5 minutes. Remove from the heat, and remove the star anise and cinnamon stick. Set aside to cool. . Cake • 1.75 cups Self raising flour • 1 tsp baking soda • 0.5 tsp baking powder • 0.5 tsp salt • 0.75 cup coconut sugar • 1 tsp vanilla extract • 4 tbsp coconut or rapeseed oil • Zest of 3 Clementines or 2 oranges • Flesh of 2 Clementines • 2 tbp lemon juice • 1 cup oat milk • 0.25 cup maple syrup • 6 Clementines (peeled and sliced). . Preheat your oven to 180°C. Sift the flour, baking soda and baking powder into a large bowl. Add the coconit sugar and salt and stir. In a blender, mix the vanilla extract, oil, clementine zest and flesh, lemon juice, oat milk and maple syrup. Pour the mixture into the bowl of dry ingredients and whisk gently to rid any lumps. Line the bottom of your cake tin with a circle of parchment paper and grease the sides of the tin with coconut oil. Arrange the clementine slices on top of the parchment paper. Pour the cranberry mixture into any gaps between the slices (you may not use all of the sauce - hold aside leftovers for serving). Pour the cake batter into the tin and bake for approx 30 mins depending on your oven. Check if the cake is ready after 20 mins by sticking a knife into the centre, it should come out clean but of there is batter residue bake further until fully cooked. Once ready, remove the cake from oven and allow to cool slightly before carefully turning it out onto a cooling rack. Serve with coconut cream and extra cranberry sauce . I had to give this a try after seeing @panaceas_pantry and @bos.kitchen's AMAZING pavlova wreaths (check them out 👌). I'm so grateful for their recipes and tips which I used as a base for creating lots of recipe experiments over the past few days! . * Linzer cookies, are you a fan? Some of my earliest memories of Christmas are of my mother baking rows and rows of them! So in really happy to say that making a veganized version of these cookies is incredibly simple! I was inspired by @panaceas_pantry to give them a go. Kath and Jade have really nailed the vegan version of these biscuits. They have an amazing recipe on their page, and I just tweaked it a little adding sunflower spread instead of coconut oil and they turned out great! What are you're favourite cookies to eat over the holidays? P.S. The Black forest cheesecake tart recipe is now on the blog! I'll pop the link into the "recipes" story highlight.
