Thought griddles were just for smash burgers, breakfasts and steaks? They’re actually a lot more versatile than that. We smoked some ribs on our griddle using @cuisinart creole mustard rib and they turned out awesome. Really easy and straight forward. You prep your ribs just like you normally would, place them on a cooling rack and put that on the griddle on medium/low heat. Put some pellets or wood chips underneath the cooling rack and let the smoke roll 💨 💨 💨. Spray them with diluted orange juice every 30 minutes to keep them moist like you normally would and let them go until you get an internal temp of around 200F. There's no easier or cost effective way to feed a crowd over the summer than a pork butt. We used a stick burner to smoke this guy and with the exception of reloading wood, we didn't touch a thing for the entire 7 hour cook - it's that easy. After pulling the pork, we decided to make fajitas which were incredibly easy and everyone loved building their own fajitas. Here is the full recipe: - Remove the skin from the pork butt if the butcher hasn't already done that for you - Remove the fat cap with a sharp knife. There's enough marbling in the pork butt to stay moist without it - Coat the pork butt generously with your favorite rub - Set your smoker to between 300-325F - Place the pork butt over a drip tray filled with orange juice - Remove the pork butt when an internal temp of 195-200F is reached - Shred the butt into small bite size pieces - Build your fajitas with your favorite toppings.
