Potato and celery pulp fritters for breakfast! I wanted to give celery juice a try. After determining that I’ll never try THAT again I wanted to find a use for the celery pulp. Usually I’d toss it in my veggie scrap bag in the freezer to later make veggie broth with, but I decided to get creative. I used the pulp and mixed it with potato, parsley, flax egg, turmeric, onion powder, garlic powder, sea salt, and black pepper. Chia oat donuts for breakfast makes my toddler a very happy boy. —————————————————-— Donut Recipe: 3/4 cup gluten-free oat flour (just blend gluten free oats), 1/2 cup chia seeds, 1.5 tsp baking powder, 1/4 tsp fine-grain sea salt, 1/4 tsp ground cinnamon, 1/3 cup pure maple syrup, 1/4 cup nondairy milk, and 1 tsp pure vanilla extract. 1. Preheat oven to 300 DF. Lightly oil a 6-cavity donut pan and set aside. I ordered my donut pan for $6 off amazon and it arrived in two days. 2. In a large bowl, combine the oat flour, chia seeds, baking powder, salt, and cinnamon. 3. Add the maple syrup, milk, and vanilla and stir until combined. Should be runny. 4. Spoon the batter into the pan, filling each cavity to the top. 5. Bake the donuts for 22-26 minutes until firm to touch. 6. Cool the donuts in the pan for 10 minutes and then carefully invert the pan onto a cooling rack. The donuts should pop right out. If they don’t cool a bit more and run a butter knife along the edges. If you want to boost lactation just add some brewers yeast too.
