Red Velvet Protein Cheesecake ๐Ÿ’•๐Ÿ’•๐Ÿซ Because the weekend deserves some tasty treats โค๏ธ I used the new Red Velvet flavour protein powder by @pranaon - so yum ๐Ÿ˜‹ all other ingredientsfrom @thesourcebulkfoods @thesourcerousehill โค๏ธ I added beetroot for some extra red colour and veggie goodness, but you could use frozen raspberries. If you donโ€™t like tofu then replace that with yoghurt or some coconut cream. Itโ€™s very forgiving! I used agar to set the cheesecake. It sets at room temperature so you can start eating it almost immediately if you want ๐Ÿ˜€ but I like mine chilled ๐Ÿ˜ I hope you all had a fabulous weekend ๐Ÿ’œ ๐Ÿ’•๐Ÿ’•๐Ÿ’• Red Velvet Protein Cheesecake (7inch cheesecake) Base 100g almond meal / 1 cup 2 Tbsp cacao powder 30g coconut oil 15ml almond milk as required Mix in a bowl until a dough forms. Add the almond milk as required to help it come together. Press into the base of pan Filling 300g silken tofu 100g cooked beetroot 200g coconut yoghurt 2 scoops / 80g red velvet protein powder @pranaon 1 Tbsp cacao powder 70g xylitol (or natural sweetener to your taste) 1 tsp vanilla extract 2 Tbsp Agar Flakes or 2 tsp agar powder 1 cup water Blend all ingredients except Agar and water in a high powered blender until smooth. Taste for sweetness and adjust. Add water to a saucepan and sprinkle over the Agar flakes. Allow to soak for 10 mins. Turn on heat and bring to the boil, stirring. Reduce heat and simmer for a further 5 mins until flakes are dissolved Turn the blender back on and drizzle the Agar mix into the tofu mix until blended. Also gluten free as it turns out ๐Ÿ˜€ Full of fibre, cacao nibs and seeds for extra crunch. I used xylitol to keep it lower in sugar ๐Ÿ’• so you could probably eat these for breakfast too ๐Ÿ˜€ I picked up all my goodies at @thesourcebulkfoods @thesourcerousehill , and I love how you can make fresh PB in store ๐Ÿ˜ ๐Ÿซ Healthy PB Choc Slice (Makes 8-10 slices) 1 cup / 70g desiccated coconut 50g almond meal 40g coconut flour 15g cacao nibs 20g cacao powder 50g xylitol ^ 1/4 cup 35g sunflower seeds 10g chia seeds 10g psyllium husk 60g Smooth Peanut Butter 1/2 cup almond milk ^if using liquid sweeteners, reduce almond milk by the same amount Whisk PB and almond milk together and stir into dry ingredients. Add enough milk until it sticks together when pressed. Spoon into a small lined container/tray and press down firmly Place in the fridge while you make the topping PB icing* 40g peanut butter 40g xylitol 1 T so almond milk Warm in a pan on low heat until smooth Spread over slice. Choc Chip Muffins - vegan and oil-free ๐Ÿซ๐Ÿช Because sometimes you just need some chocolate in your life ๐Ÿ˜€ Recipe below ๐Ÿซ ๐Ÿซ๐Ÿซ๐Ÿซ Choc Chip Muffins (Vegan) (Makes 6) 1 cup plain flour (or flour of choice) 1/2 cup granulated natural sweetener (raw sugar, coconut sugar) 1 tsp baking powder 1/4 tsp baking soda (bicarbonate) 1/4 tsp salt 1 tsp vanilla extract 75g choc chips 3/4 cup soy milk or almond milk 1/2 tsp apple cider vinegar Preheat oven to 180C Mix milk and vinegar and allow to stand for 5 mins to turn into buttermilk Mix dry ingredients, mix wet ingredients Add wet to try dry and stir until just mixed Add choc chips and stir through Spoon into 6 muffin cases (I used silicon) Bake for 20-25mins until lightly golden and a skewer comes out clean

A little fitness update and vegan day on a plate for you ๐Ÿ’œ I missed a couple of weeks of the @fernwoodfitness 12 week challenge while I was in Hawaii, so Iโ€™ve made sure not to miss a workout this week. After some typical holiday eating, it was time to clean up the diet again, and get back on track. Maqui Coconut Chia Pudding ๐Ÿ’œ๐Ÿ’œ๐Ÿ’œ with ingredients I picked up at @mrvitamins before we headed to Hawaii. Maqui is a dark purple berry powder, full of antioxidants. Coconut yoghurt adds a delicious creaminess, but feel free to swap it out for your mylk of choice if preferred ๐ŸŒด Chia seeds are full of omegas and fibre, and are great for your digestion and to keep you fuller for longer ๐Ÿ‘Œ Eat in a cup or add to a bowl topped with your favourite chopped fruit and some coconut pieces ๐Ÿฅฅ Yum! We travelled to the big island of Hawaii today to see the volcanoes ๐ŸŒ‹ which was very cool, even though there is no lava flowing at the moment ๐Ÿงก It was cool to walk on the hard lava and through the steam vents ๐Ÿ’œ After a 4am start, my body clock is totally thrown now โฐ ๐Ÿ˜ฌ ๐Ÿ’œ๐Ÿ’œ๐Ÿ’œ Maqui Coconut Chia Pudding (Serves 2) 1/2 cup chia seeds 1 tsp maqui powder (or berry powder) 2 cups yoghurt (I used coconut) (or mylk of choice) 1 tsp vanilla extract (optional) 3-6 tsp natural sweetener to taste (xylitol, coconut sugar, maple syrup) 1/2 cup water *optional extra - add protein powder, whole or purรฉed berries Mix all ingredients in a jar and place in the fridge overnight to swell. Add additional mylk or water to desired consistency
