Itโ€™s been nice to have some relaxing starts to the day without the usual rush, rush, rush. Happy Sunday everyone ๐Ÿ˜˜ ๐Ÿฅž Ingredients from @thesourcebulkfoods @thesourcerousehill ๐Ÿ’• Raspberry Coconut Pancakes (Serves 2-4) 1 & 1/4 cups Gluten Free All Purpose Plain Flour Blend* 2 Tbsp desiccated coconut 120g frozen raspberry (or apple) purรฉe (or 1 banana sliced) 2 Tbsp granulated stevia/erythritol blend (or natural sweetener of choice - maple, coconut sugar) 1 & 1/2 tsp baking powder 1 Tbsp coconut oil 1 & 1/4 cups unsweetened coconut milk (or milk of choice) Pinch of salt 1 tsp pure alcohol free vanilla extract *Add 1/4 tsp xanthan gum if desired to gluten free flour, if yours doesnโ€™t have it for added fluffiness Mix dry ingredients in a bowl Mix or blend wet ingredients Pour wet into dry and stir until just combined Ladle batter into pan as required Cook over low heat until bubbles form, then flip and cook on other side *optional - add a tsp of pink pitaya/dragonfruit powder to the mix for extra pinkness Top with sweetened almond or coconut yoghurt, berries and a sprinkle of coconut . . . #pancakes #yoghurt #breakfast #glutenfree #beautifulcuisines #pancakelover #pancakesunday #berries #pancakeporn #healthychoice #eathealthy #f52grams #thefeedfeed #dairyfree #healthybreakfast #eattherainbow #vegan #veganfoodshare #foodstyling #foodphotographer #sydneyeats #realfood #inspiration #foodphotography #breakfastideas #veganblogger #breakfastgoals #plantbased #eeeeeats #cleaneating

Classic Banana Bread - Vegan ๐Ÿ’›๐ŸŒ The sweet smell of maple, coconut and banana wafting through the house on the weekend is so hard to beat ๐Ÿ˜ I made this with Wholemeal Spelt flour. The family demolished some hot slices with butter after these pics were taken. So good! ๐Ÿ’› As you do, I moved into two locations with our Winter fading sun, and the colours came out so different. Which pic do you like best? ๐Ÿค”๐Ÿค”๐Ÿค” ๐ŸŒ All ingredients from @thesourcebulkfoods @thesourcerousehill . It said it was 49% protein ๐Ÿ˜ฎ so I thought - Iโ€™ll be into that! ๐Ÿ˜€ I love pepitas, theyโ€™re full of zinc, iron, magnesium, and phosphorus, and are good for the immune system, energy, muscle building and repair ๐Ÿ’ช So I knew I needed to use it in some way. These muffins came out so moist and delicious, and theyโ€™re perfect for breakfast, snacks, or pre / post workout ๐Ÿ’• I hope you give them a try ๐Ÿ˜˜ ๐Ÿ Pumpkin Seed Muffins with Maple Tahini Streusel (Makes 6 muffins) 1 & 1/2 cups / 120g rolled oats 1/2 cup / 50g Pumpkin Seed flour 30ml maple syrup 25g xylitol/brown sugar/coconut sugar 1/2 tsp vanilla extract 1/4 tsp salt 3/4 tsp bicarbonate soda (baking soda) 1 cup water Blend until smooth Bake at 190C for 22 mins Maple Tahini Streusel 1 Tbsp maple syrup 1 tsp tahini 1 Tbsp rolled oats 1 Tbsp pumpkin seed flour 1/8 tsp cinnamon / pinch 1/8 cup pumpkin seeds Add to a small frypan and stir over low heat until combined and thickened Add to muffins prior to consuming *I realised that low oil, gluten free means they stick to the paper liners a little. Made with @barillaaus new Chickpea Casarecce, which has 18g plant based Protein per 85g serve and naturally gluten free ๐Ÿ’ช Itโ€™s made from just 1 ingredient - 100% Chickpea flour. So itโ€™s filling, nutritious, lower in carbs and delicious! โค๏ธ Make sure to check it out at Coles & Woolies. You can take a lot longer to make this by baking or grilling fresh eggplant and using fresh cherry tomatoes, but after a busy week, we all need Pasta on the table FAST! So check out my cheatโ€™s version below ๐Ÿ˜€ โ€ข Pasta alla Norma 100g onion diced 2 cloves garlic crushed 400g can Cherry Tomatoes 300g jarred grilled eggplant chopped 2 dried red chillies crumbled 1/4 cup fresh basil torn (extra to garnish) 1/4 vegan Parmesan grated or nutritional yeast 1/2 tsp pink himalayan salt Black pepper to taste Sautรฉ the onion and garlic for 3 mins in a frypan at medium heat. Add a splash of water (or oil) as required to stop it drying out. Add the can of tomatoes, eggplant, chillies, salt, pepper and basil, and stir to combine. Allow to simmer gently while you cook the pasta Pasta 250g box Barilla Chickpea Pasta Cook in salted water as per directions.
