Almond Butter Spelt Waffles ๐Ÿ“ and workout update (Swipe for pics) Iโ€™ve been working out regularly at @fernwoodfitness during my bulk and increasing my weights each week on my program ๐Ÿ‹๏ธโ€โ™‚๏ธIโ€™m really happy with how itโ€™s been going. Weโ€™ve decided to go on a holiday to Hawaii next month, so Iโ€™m going to stop my bulk and do a mini cut over the next 4 weeks. So Iโ€™ll be adding in a couple of short HIIT workouts, and cut down my calories a bit, and weโ€™ll see if weโ€™re bikini ready in time ๐Ÿ‘™ ๐Ÿ˜Š Then back to a bulk again for Autumn and Winter in Australia ๐Ÿ’ช Itโ€™s great with eating more whole foods than I can still fit in some waffles ๐Ÿ™Œ Happy Sunday everyone ๐Ÿ˜˜โค๏ธ ๐Ÿ‘™ Almond Butter Spelt Waffles 2 cups Wholemeal Spelt Flour (or flour of choice) 1 & 3/4 cups soy milk 2 Tbsp apple cider vinegar 2 Tbsp almond butter (or PB) 2 Tbsp natural sweetener to taste 4 tsp baking powder 1/2 tsp vanilla extract Pinch of salt Preheat waffle iron Mix soy milk and vinegar in a jug and allow to sit for 5 mins Mix dry ingredients, mix wet ingredients Add wet to dry and stir until just mixed Allow batter to rest for 5-10mins. Easy Healthy Vegan Chocolate Cake ๐ŸŽ‚ ๐Ÿซ๐Ÿ“ topped with seasonal berries and drizzled with choc sauce ๐Ÿ˜ Full recipe below โฌ‡๏ธ Sometimes you just need a quick and tasty cake to keep the family happy on a grey weekend. All ingredients from @mrvitamins โค๏ธ We decided to paint our dark wood stained dinner table with concrete paint for a different look. Goodness knows how that will turn out ๐Ÿ˜ฌ Just sanding and base coat today. We thought it was good to recycle and reuse our own furniture instead of spending thousands on a new concrete one. Fingers crossed it works out ๐Ÿคž Happy weekend everyone ๐Ÿ˜˜ โค๏ธ Easy Vegan Chocolate Cake 1 cup whole meal spelt flour (or all purpose or gluten free blend) 1 cup xylitol (or coconut sugar, sugar) 2 tsp baking powder 1/4 cup cacao powder 1 cup soy milk 1 tsp apple cider vinegar 1 tsp vanilla extract 1/8 tsp salt Preheat oven to 180C/350F Mix milk and vinegar and allow to stand for a few mins while you gather the other ingredients Mix all ingredients in a bowl until just mixed Spoon into a greased or lined cake tin Bake for 30 mins or until a toothpick comes out clean Allow to cool. Drizzle with your favourite icing. Do you love Apple Pie Oats? ๐ŸŽ ๐Ÿ Iโ€™m a huge fan. I eat it hot in Winter and cold in Summer, so itโ€™s good all year round. Full of fibre and flavour, you canโ€™t go wrong. I got my ingredients from @thesourcebulkfoods @thesourcerousehill ๐Ÿ Weโ€™re in for another week of 40C this week ๐Ÿ˜…โ˜€๏ธโ˜€๏ธโ˜€๏ธ so Iโ€™ll be eating all the cold foods while the air conditioning is blasting. Happy Monday everyone ๐Ÿ˜˜ ๐ŸŽ๐Ÿ Apple Pie Oats 1/2 cup oats 1 Tbsp seed mix 1/2 cup almond milk unsweetened 1 cup water 1/2 tsp cinnamon 1/4 tsp ground ginger 1/8 tsp nutmeg 1/8 tsp allspice Xylitol (or natural sweetener of choice) to taste 1 pink lady apple (1/2 grated, 1/2 sliced) Soak ingredients overnight or cook until thickened. We went and watched the new Wreck-It-Ralph movie and I canโ€™t wait to see the new Mary Poppins, my childhood favourite ๐Ÿ’• But most time has been spent in the pool as itโ€™s been so hot in Sydney โ˜€๏ธ๐Ÿ’ฆ Happy Thursday everyone Big thanks to @bestofvegan for the feature of my oat jars ๐Ÿ™ ๐Ÿ’œ๐Ÿ’™ Blueberry Granola Cheesecake Bars (Makes 12 mini muffin bites, 6 small loaf or muffin size, or one small round cheesecake) Base 70g / 2/3cup almond meal 40g / 1/3 cup coconut flour 2 Tbsp / 40ml coconut oil melted 2 Tbsp / 40ml rice malt syrup Mix in a bowl and press into a lined tin or silicon molds Filling 1 cup cashews / 150g (soaked for 30mins in boiling water or overnight) then rinsed and drained 100g frozen blueberries (not thawed) 1/2 cup coconut cream or milk 30ml coconut oil 1 tsp vanilla extract 1/3 cup Natural sweetener (white stevia, coconut sugar, maple, rice malt) (more to taste) Juice of 1 lemon (1/3 cup juice) 1/4 tsp salt Blend all ingredients in a blender until smooth Spoon over base Place in the freezer while you prepare the topping Granola topping 3/4 cup quick oats 1 x 20ml Tbsp each coconut oil and date syrup (rice malt or maple) Stir in a frypan over medium heat for 5 mins Spoon over filling and press down lightly Chill cheesecakes overnight Can be stored and eaten from the freezer. Thaw for a few mins prior to consuming

Portobello Beetroot Lentil Burgers ๐Ÿ” Full recipe below โฌ‡๏ธ Portobello Mushrooms ๐Ÿ„ just make the perfect burger buns if youโ€™re on a keto or low carb kick to the new year. Or if you just love mushrooms like me ๐Ÿ˜€ I had mine with a side of sweet potato fries ๐Ÿ  because Iโ€™m eating allll the carbs after my workouts at @fernwoodfitness and working to build those muscles some more this year. Lentils add plenty of protein ๐Ÿ’ช and beetroot raises nitric oxide levels, which can increase blood flow and strengthen muscle contraction ๐Ÿ‹๏ธโ€โ™‚๏ธ Topped with avocado and some salad leaves - yum. I hope you give them a try โค๏ธ Big thanks to the lovely Cindy for sending me some beautiful cutlery props as a surprise. Best gift Ever ๐Ÿ’•๐Ÿ˜˜ ๐Ÿ” Portobello Beetroot Lentil Burgers (Makes 4) 200g grated beetroot 1 x 400g tin lentils drained (~220g) 1/2 cup quick oats blended into flour (or flour of choice, or almond meal) 1 red onion diced 1 tsp each garlic and ginger paste 1 tsp each cumin powder, smoked paprika, garam masala 1/2 tsp ground coriander Salt & pepper to taste Sautรฉ the onion in a frypan for a few mins until softened, adding some boiling water as required to avoid sticking Add the garlic and ginger paste and sautรฉ for 1 minute. Remove from heat. Add all ingredients except oats to a blender and pulse 10 times of so until desired consistency. Spoon into a bowl and add the oats until it comes together Divide into 4 and form into patties Put in the fridge to set for 30 minutes if possible (optional) Cook in a frypan with a little coconut oil for 4-5 minutes each side. Choc Fruit & Nut Slice ๐Ÿซ๐ŸŒฐ๐Ÿงก Super simple to make (recipe below) and itโ€™s filled with the things you like ๐Ÿ‘Œ I used @lucky.nuts hazelnuts, pistachios and almonds, with dried cranberries and apricots.
