Colorful, spicy Mexican quinoa bowls to brighten up this super dreary Monday 🔥🍅 The best part? This only uses ONE POT and takes ~20 minutes. The most satisfying meal for the Monday-est Monday ever. #easymealswithmb #bitesonabudget. . In a large saucepan, sauté 1 jalapeño, 1/2 white onion, and 2 cloves minced garlic in some olive oil until soft. Add 1 cup vegetable broth and 1 cup quinoa. Add 1 cup corn (I used canned), 1 can black beans, and 1 14 oz. can diced tomatoes. Add seasonings: salt, pepper, 1 tsp. chili powder, 1 tsp. cumin, and a few dashes of hot sauce. Bring to a boil, cover & let simmer for 15-20 minutes until quinoa is cooked. Mix in juice of one lime & a few handfuls of chopped cilantro. Serve with some greens, avocado & more cilantro and hot sauce! Would also be good with shredded cheese 😋 This makes ~4 large servings, and I’ll have the leftover for lunch throughout the week.
I haven’t had a lazy, slow Sunday morning in a very, VERY long time. Today I slept in, read in bed for a while, and now enjoying some cozy savory oatmeal on the couch. DO NOT knock this oatmeal combo until you try it, trust me 👌🏻 #easymealswithmb . . SAVORY OATMEAL 👉🏻 Cook 1/2 cup oats on the stovetop in water or almond milk. Add salt, pepper, red pepper flakes, and a dab of butter. Sauté mushrooms in olive oil, salt & pepper. Fry up a runny egg. Mix it all together and add @traderjoes everything but the bagel seasoning 🥄😋
Inspiration is a funny thing. It’s amazing to me how changing your environment can spark creativity. For me, moving to Brooklyn was exactly what I needed to clear my mind and get me out of a creative rut. . It’s no secret this account has been seriously lacking this year. I really don’t know why, but I simply just wasn’t feeling inspired or wanting to share things with y’all. But moving apartments has given me clarity, room to breathe, and room to CREATE. . I’m finally feeling inspired again, and I’m so excited because I truly love this community. I miss engaging with y’all on a daily basis. I miss partnering with brands I love. I miss sharing my love for healthy eats and fitness as much as I miss sharing my love for margaritas and boozy brunches. Long story short, I miss YOU GUYS. Stir fries will always be one of my staple dinners, mainly because I never use a recipe when I make them and they are QUICK (yo girl is haaaangry after work 😅) . . I use whatever veggies/protein I have in the fridge and toss with (GASP) storebought teriyaki sauce. (Although I do love making my own - still working on stocking up the new fridge!). . The last few times I’ve been to the grocery store, I haven’t really had a plan 🤷♀️ I pick up whatever produce looks good/is on sale, make sure I get a few sources of protein, and treat myself to a few ~fun~ items too (lately it’s been cherries!). . This “system” probably won’t last, but for now it’s fun and allows me to be creative in the kitchen every night without a set meal plan. And that’s how this salmon with homemade olive tapenade and quinoa tabbouleh was born! 🔥 How do y’all grocery shop? Do you have a plan or just wing it? #easymealswithmb. . Salmon with Olive Tapenade 👉🏻 Finely chop 1 cup of pitted kalamata olives. Combine with 2 cloves minced garlic, 2 tbsp. olive oil, 1 tbsp. balsamic vinegar. 1 tsp. dried parsley, salt & pepper. Spread over salmon & bake for 20 minutes at 400°. I used a HUGE piece of salmon (this is just 1/4 of it!) that I can eat throughout the week. . Quinoa Tabbouleh 👉🏻 Recipe inspired by my fave @bonappetitmag. Cook 1/2 cup quinoa and let cool. Chop 1 cucumber, 1 pint cherry tomatoes, 2 scallions. Finely chop 1 cup mint & 1 cup parsley. Make a dressing of 1/4 cup olive oil, juice of 1 lemon, 3 cloves minced garlic, salt & pepper. Add dressing & veggies to quinoa and top with feta! Makes 4 servings.

I started this week feeling EXHAUSTED after a crazy weekend. Don’t get me wrong, I love socializing & drinking with my friends, but I truly cannot do those late nights anymore 😂 The grandma in me was craaaaving sleep and home cooked meals, so that’s what I’ve been giving myself this week! Finally feeling back to normal after a few solid nights sleep and meals that look like this 💁♀️ #easymealswithmb . . Tried out @misfitsmarket for the first time and it certainly will not be the last! Such a fun and smart concept to eliminate food waste. My box came with so many goodies, including the ripest organic tomatoes, an eggplant, and a HUGE cucumber. Made a salad tonight with arugula, tomato, cucumber, feta, roasted chickpeas, roasted eggplant and a tahini drizzle 🥗 🥒

What’s your go to comfort food? . . Whenever I’m feeling a little blah or down in the dumps, I find that a huge bowl of nutrients is sometimes just what I need. To me, a satisfying bowl of warm vegetables is “good mood food.” ❤️ I know that’s not everyone’s first choice, but it’s what works for ME. Ending a much needed restful weekend on a high note with homemade pesto and cauliflower gnocchi 😋 Mixed with sautéed arugula, sugar snap peas, spinach + fennel @bilinskisausage, olives, and sundried tomatoes. This took me maybe 10 minutes and was SO delicious and summery ☀️✨ #easymealswithmb . . For the vegan basil pesto 👉🏻 Blend together 3 garlic cloves + LOTS of basil + 1/3 cup olive oil + 1/3 cup of slivered almonds + a splash of lemon juice + 3 tbsp. nutritional yeast + salt + pepper + red pepper flakes 🌿

I went to Las Vegas this weekend for @bonappetitmag Vegas Uncork’d event and didn’t take a single picture of food. And believe me, there was FOOD. But I did get this picture in front of a wall of pink flowers drinking champagne 🥂🌺. . There was a time when attending an event like this would have given me extreme anxiety. I am forever grateful that I’m able to live in the moment and focus on making great memories instead of stressing over food. Weekends like this make me realize how far I’ve come and how dang happy I am to be where I am today 🙌🏻☺️ Cheers, y’all!
