Easy and yummy pasta by @anettvelsberg. Recipe below and in the video. Ingredients: 1 tbsp @nutiva Organic Refined Coconut Oil
1/2 red onion, thinly sliced
2 garlic cloves, finely chopped
1/2 zucchini, cut into half-moons
1 yellow bell pepper, roughly diced
1 tsp dried oregano
1/2 tsp red pepper flakes
1 cup diced tomatoes
1/4 cup sun-dried tomatoes, roughly chopped
2 cups veggie stock
1 tsp salt
1 tsp sea salt
200 gr spaghetti
Salt and pepper, to taste
Fresh basil, to serve

Heat the coconut oil in a medium-sized pot. Add the onions and cook until slightly browned, about 3 minutes, then add the garlic, zucchini and yellow bell pepper. Fry for 2 minutes, then add the dried oregano, red pepper flakes, diced tomatoes, sun-dried tomatoes, veggie stock and salt. Stir and place in the spaghetti. Wait for the spaghetti to soften enough to be submerged in the liquid, then cover and cook for 10-12 minutes or until the pasta is cooked. Add the onion and cook for 2 minutes while stirring occasionally. Add the garlic, then stir. Add the ginger, then stir. Add the carrots, leek, celery, rosemary and turmeric. Cook 5 minutes while stirring frequently. Add the water and vegetable stock. Stir. Add the sweet potato and red potato. Add the salt, stir, then add the bay leaf. Make sure all veggies are submerged - if not, add more water or stock. Increase heat to high and bring to a simmer. Reduce heat to low, cover the pot with its lid, and cook 30-40 min. Remove the bay leaves. Add kale, parsley, and lemon juice. Stir for 2 minutes. Then you can either add the zoodles and cook for a minute, or place the zoodles in serving bowls and pour the soup over them. Serve and enjoy! For leftovers, make just enough zoodles for that serving so they don’t get too soft from sitting in liquid for too long!
