I would've gone with brown rice but I was out, so I thought why not! I also added some shredded carrot for that extra sweetness. Preparing yourself for at least two out of the three main meals (my breakfast is always a fruit and protein shake with plant based milk) that you'll eat in the week will keep you on a good path of eating whole, home made food. Good old beans and rice. KALE SALAD WITH PICKLED ONIONS . . . Here’s a recipe for a quick kale salad I threw together in a pinch (starving after workout). I always have salad makings on hand for this reason! So here’s how to make this delicious, easy, salad: 1. Fold and cut off stems from kale (I prefer dinosaur kale or the flat looking one). Slice in half and layer them. Roll layered kale up like a sushi roll and chop (that’s how you make those strips! 2. Add a drizzle of olive oil and massage the kale with your hands. Add splash of lemon juice, salt, and pepper. 3. Top with avocado, bacon bits, salad topper of choice (I like @natursource which we get at Costco), and pickled onions! See my IGTV for how to make pickled onions! They are so versatile and delicious!
