🍤SHRIMP with Garlic Tahini Broccoli Slaw 😍 Tag someone who would love this! . . By @shredhappens . If you haven’t tried broccoli slaw you’re missing out!. I dressed it up with a nutrient-dense dressing I made with a handful of cilantro, garlic, spinach, tahini, and lemon. As always, feel free to experiment and substitute out any of the ingredients to suit your tastebuds. You can use this dressing with salads, with noodles, or use as a dip for vegetables. Tahini has such a nice kick and at 0 net carbs, it’s a great alternative to using oil for dressings. . To make a large batch of the dressing/pesto: . 1.In a small food processor, I threw in 1 handful of fresh cilantro, 1 cup of baby spinach, 2 cloves fresh garlic, 1 tablespoon olive oil, 1/4 onion, juice of 1.5 lemons. . 2.Pulsed all of the above together, then added 2 tablespoons of tahini. . 3.Pulse and pureed everything above and added sea salt, pepper, and a little ginger, then ran the food processor again. . 4.At this point, I did a quick taste of the sauce to see if I wanted to season with more salt, add more lemon juice, or add more herbs. This all depends on your taste buds. I mixed some of it with the slaw and put the rest in the fridge. . I can't wait to try this Double Dark Chocolate Zucchini Loaf from @GreenSmoothiGourmet Recipe below In Medium Bowl 1 flax egg 1 tbsp flax seed + 3 tbsp water) 1 cup zucchini, washed and pureed roughly (Please buy organic zucchini only; it is on the "dirty" list with the EWG 1/2 cup maple syrup 1/3 cup nut butter (I used almond butter) 1 tbsp canola oil ½ cup plant milk (I used almond milk) 1 tsp lemon juice 1 tsp vanilla In Large Bowl 1 cup gluten-free all-purpose flour 1/2 cup cacao powder 2 tbsp black cocoa (optional, for dark dramatic color) 1 tsp baking soda pinch of salt Prep Make flax egg and set aside for 5 minutes. Preheat oven to 350 F. Spray an 8-inch by 4-inch loaf pan with organic canola spray, and dust with cacao powder Wash zucchini, chop, and then puree/chop to a rough consistency in a processor. If you need add a few teaspoons of water to get it to blend, press it out with paper towels to dry zucchini pulp a bit. Add the lemon juice to the milk and set aside for 5 minutes Make the Batter In the medium bowl, stir flax eggs, nut butter, maple syrup, milk/lemon mixture, oil, vanilla. In the large bowl, stir with a spoon flour, cacao powder, black cocoa, baking soda, salt. Pour the contents of the smaller bowl (wet) into the larger bowl (dry); blend together with a hand-blender or spoon. Don't over stir or the mixture will not bake properly. Add in the pureed/chopped zucchini. Hand stir into the batter, again very little stirring. Pour the batter into the loaf pan. Bake for 40 - 50 minutes to possible 60 minutes but start checking at 35 minutes for doneness. To avoid the top browning, cut parchment paper and put it on the top of the cake at about 35 minutes. Decided to take a few more days off the gram after the big IG Crash of 2019. It felt good and sometimes it's nice not to take pics of everything I eat 😊 But only sometimes because now I miss it and I'm back with a crunchy, refreshing salad! I haven't been as into salads lately since it's been colder the past few months, but now it's starting to heat up and it's officially Spring tomorrow so I'm slowly getting back into the salad grind 💪 Salads are a great go-to healthy meal because you can get in tons of veggies and leafy greens and you can never have enough of those! ___ Spinach and arugula, sliced green apple, cabbage, carrots, sunflower seed kernels, broccoli sprouts, hemp hearts and a simple evoo/balsamic dressing.

✨When I first started using these little containers a few years ago I was like “yeah okay these are supposed to help me lose weight? Pfft.” ✨ You guys, my weight loss plan is eating about 1900 calories a day. WEIGHT LOSS! We have this idea that eating less is better but it really isn’t. Eating the right foods is. ✨Confession: I stopped doing portion control about a year and a half ago. Why? Because I would get “Stephanie, you don’t have to do this,” “all you have to do is calories in calories out,” etc. A friend stopped talking to me because it’s what I did and LOVED to do. And I gave in to all of those pressures because I didn’t want to be knocked down anymore. ✨NOT ANYMORE lol THIS is what worked for me. Maybe it will for you, you never know. I WILL NOT let anyone make me feel like I’m doing something bad. It’s balanced macro nutrition. I still get treats, I’ll still have that glass of wine, I’ll still eat a slice of pizza. Will I over do it? No. I was SO happy and I want to get back to that. ✨THAT is my why. I want to feel happy again 😊.
