I posted this video on my stories and wanted to share the recipe, so here it is again. Enjoy 🌱🌿🌻⁣ ⁣ S W E E T P O T A T O S A L A D⁣ ⁣ INGREDIENTS⁣ 5 large cos lettuce leaves⁣ Handful of spinach⁣ Handful of rocket⁣ Olive oil and rosemary rosemary sweet potato⁣ 5 cherry tomatoes⁣ 1/2 cup chickpeas ⁣ 1/4 large avocado⁣ 2 slices of halloumi ⁣ 2 tbsp pine nuts⁣ Himalayan salt + pepper to taste⁣ ⁣ METHOD⁣ 1) Rinse, pat dry and cut sweet potato into bite-sized pieces. In a large bowl rub sweet potato in olive oil, cinnamon and rosemary. Transfer to roasting tray and roast at 180 degrees for 30 minutes.⁣ 2) While that cooks, prep your veggies. Leave to soak in water for 15 minutes. Pat dry and cut to your liking.⁣ 3) ‘Fry’ halloumi in a small frying pan with no oil for 1-2 minutes on each side.⁣ 4) Assemble salad with all ingredients & enjoy!⁣ ⁣ I always throw together whatever salad ingredients I have in the fridge and it’s always a g time... this is one of those throw together random salads 😅 but I loved it.
