Shrimp 🍤 1 tablespoon olive oil 1 pound medium shrimp, peeled and deveined salt and pepper to taste 1 teaspoon chili powder 1 teaspoon minced garlic 2 tablespoon lemon juice Chopped cilantro leaves (about 2 tbs) . Zoodles Olive oil, salt, pepper and garlic powder Do not cook for more than 1-2 mins. . Directions Place the olive oil in a large pan over medium high heat. Add the shrimp and season them with salt, pepper and the chili powder. Cook the shrimp for 2-3 minutes or until just pink. Stir in the garlic and cook for an additional 30 seconds. Stir in the lime juice and cilantro, then serve. By @cafedelites Servings: 4 people Ingredients 2 tablespoons fresh squeezed lime juice 2 tablespoons oil 1 large garlic clove, minced 1 1/2 teaspoons ground cumin 1 teaspoon salt 1/2-1 teaspoon ground chili (adjust to your desired spice preference) 1 tablespoon fresh chopped cilantro (optional) 1 1/2 pounds (650 grams) chicken thighs, skinless and boneless 3 large bell peppers (or capsicums), cut into strips (I use green, red and yellow) 1 red onion thinly sliced 2 avocados, peeled, seeded and sliced Instructions In a large shallow bowl, combine lime juice, oil, garlic, cumin, salt, chili and cilantro; mix together. Add the chicken thighs and If time allows, let marinate for 30 minutes. Heat a large skillet or pan (12-inch | 30cm) on medium-high heat until smoking. Add a drizzle of olive oil to lightly coat the bottom of the pan. Sear the chicken on both sides until golden, charred and cooked right through (about 8 minutes per side, depending on the thickness of your fillets). Flip them a couple of times while cooking so they get a nice even char. Transfer chicken to a warm plate, loosely tent with foil and let rest. Add the peppers and onions to the skillet (drizzle with a little extra oil only if needed), and cook until the onion is soft and the peppers are slightly charred and cooked to your liking. Season with salt and pepper. Slice chicken into strips. Ending the day off with this power bowl. 💪🏽 Today, I’m feeling more like myself after a long holiday recovery period haha. All the heavier foods I ate over the holiday and after the holiday were too much for me. 💆🏽‍♀️ And while I definitely enjoyed it and don’t regret a bite, I’m very much happy to be back to bowls like these loaded to the brim with veggies and beans. It makes me feel good to eat this way, and I always get excited to come back to a meal like this. That’s how you know you’re doing it right. Just opt for the food that you know loves you back. 🥰 . Tonight for dinner I enjoyed some roasted sliced sweet potatoes seasoned with moroccan spices, mashed avocado, broccoli and stewed moroccan lentils (recipe below). 👇🏽 . Stewed Moroccan Spiced Lentils 1 cup cooked lentils (if using canned make sure to rinse well and drain before using) 1 can fire roasted tomatoes 1/2 tsp garlic powder 1/4 red onion, diced 1 tsp moroccan spice mix 1/2 tsp Trader Joe’s umami spice blend (optional) 1/3 cup sliced mushrooms 2 small carrots, peeled and sliced 1 cup vegetable broth 💕 . Add onion, mushroom and carrots to a pan set to medium heat. Cook until veggies have softened. To this add can of roasted tomatoes, the lentils and remaining seasonsing. Bring mixture to a simmer and watch. Combine mixture together and serve as is. If you prefer feel free to add some extra greens or chunked up sweet potato. ☺️🥣

Here’s hoping tomorrow is easier. Not too much eczema, but oh boy the sweating! And I thought his sweating response to sourdough was intense. This is next level! Things I’m still not good at: planning a day with only 2 activities that require me to be mentally available for people other than my family of 4. . . I get so excited on my good days that I fall into my decades-long habit of trying to pack it all in. I just LOVE seeing people I care about, taking care of loose ends, and making progress. . . One of the most frustrating parts of doctor after doctor trying to diagnose me with depression through the initial years of digging up the health journey is that I never wanted to be isolated! I didn’t want to be in a dark room or canceling plans or declining invitations to celebrate a new baby on the way or a friend’s birthday or a work promotion. I kept missing my life and I could see the life I built for so long crumbling away. Friendships fell off because I couldn’t eat out anymore, connections dwindled when I couldn’t respond or reach out as often to offer support or just a “thought of you.” I was never depressed. I was always hopeful, always working hard to find the next possible step to getting me out of that damn bed and back into the world of connected people who are living their lives. 🗣Please don’t let a doctor who isn’t hearing your actual needs delay your recovery. Keep asking for more and more resources so you can get back to your life and fulfill your dreams. . . . Also, if you find yourself on the healing journey, be gentle in your relaunch, AND in how you treat yourself when you overdo it. I’m grateful for a dad who has been navigating me through life literally and figuratively for nearly forty five years. With my husband out of town I basically had an anxiety attack about driving into the city alone, then parking, then finding my way to the right area of the right building etc, you get it. I turned an ant sized hill into a mountain and allowed myself to get overwhelmed. As soon as I found out my husband had the potential of being out of town for this all important doctor’s visit I texted my dad...HELP!?! He replied immediately ‘Not a problem’ My husband and my dad both have a very funny warped sense of humor & they both have this innate ability to calm me when I’m frazzled & I although fear and anxiety to get the best of me. Whether it’s with a silly joke, like my dad fired off first thing this morning as he got into my car, or a few words of reassurance after we walked out of the doctor’s office and I started questioning every single word he said and whether it was even worth all that time waiting to get in to see this guy. My dad, like my husband would have if he could be there, turned and said, “Well I think it’s important to focus on what we know that it is NOT! He was extremely thorough. So I would take his evaluation as a clean slate.” He’s been breathing life into me and speaking calmness over me my entire life. My husband does the very same, not just with me, but with his beautiful daughters. They are so lucky to have a daddy that not only encourages them, but also helps them see just how special they are and when they are scared or nervous or allow fear to creep in he either tells them a silly joke or he hugs them until they feel safe. They are high in fibre, antioxidants, and have a low glycemic index score - which means they cause a lower and slower rise in blood sugar levels. A constant fluctuation in blood glucose levels can lead to a long list of issues - diabetes, cardiovascular disease, and obesity just to name a few! Consuming low glycemic index foods is essential to keep levels balanced. Recipe from @minimalistbaker : 1 cup gluten free rolled oats // 1 pinch sea salt // 3/4 cup pitted medjool dates // 1/2 cup natural peanut butter Add oats and salt to food processor and blend until a flour forms // Add dates and blend for 30 seconds to a minute - until they are finely chopped // Add peanut butter and blend until a dough forms // Scoop out 2 tbsp amounts and form into a mound, placing on a parchment paper lined baking sheet // Place in refrigerator to set. Its cheery color, vibrant energy, & tart flavor brings joy to my life on a daily basis. _ Every single morning I put this happy healing fruit into my body.
