Part 2: Yesterday we had few intellectual people at our house over for dinner and we being proud Uttarakhandi made “kode ki roti” for them. One of those people happened to be Mr Bhusari from Maharashtra who have spend many years in Bangalore, Karnataka. He listened to me with great interest (I was explaining him what koda means and it’s health benefits) and ask me to show him the flour, looking at the flour he told me it’s Raggi flour (other name for koda)that is used to make RAGGI MUDDE a dish made with Raggi flour ball bolied in water and them serve with CHICKEN SARRU for lunch in Karnataka he also told us that Raggi flour is one of staple in many South Indian household. #uttarakhandheaven #uttarakhanddiaries #garhwal #garhwalifood #pahad #kumaon #raagimudde #pahadiswaggers_nz

This crop is finger millet, it’s an annual herbaceous plant widely grown as a cereal crop in the arid and semiarid areas in Africa and Asia. It’s cultivation areas are Eastern and Southern Africa and southern Part of Asia that is India and Nepal. It may come as surprise but apart from koda ki Roti and Badi. Everytime I visit home, all I have to do is ask, and I discover so many new things - new ingredients, old family recipes, and dishes I've been eating for years, but with a seasonal variation I haven't had before. Like the Arbi ki Kaafuli - a variation made with Colocassia leaves during the months leading up to the monsoon, when most other green leafy vegetables are avoided. Organic besan (ground chickpea flour), organic @akshaya

Kadhi Pakodi. Organic besan (ground chickpea flour), organic @akshayakalpa yogurt, organic spices (red chilli powder, Lakadong turmeric, ground cumin and coriander seeds), with pink Himalayan salt, are all blended. The mixture is then cooked in organic, cold pressed mustard oil, with a tadka of homegrown curry leaves, mustard and fenugreek seeds, asafoetida granules, crushed and whole red chilli peppers in organic ghee. Here, served with basmati rice, almost in a porridgey consistency, with a few plain besan, green chillies and cilantro fritters stirred in for texture. This dish, called Kadhi - pakodi (fritters in yogurt sauce) in mainstream Indian cooking, is called Jholi in my mother tongue Garhwali, from a region high up in the Himalayas. We haven’t been too active lately and thanks everyone for sticking around but we are back and with a recipe actually two of them so close to our hearts.⠀⠀⠀⠀⠀⠀⠀⠀⠀ .⠀⠀⠀⠀⠀⠀⠀⠀⠀ Well I belong to the hills of India and my husband has spent his graduation years in one of the most beautiful campuses in India in the hills ofcourse and we both have our souls still there 🙂⠀⠀⠀⠀⠀⠀⠀⠀⠀ .⠀⠀⠀⠀⠀⠀⠀⠀⠀ These dishes, I have grown up eating every summer vacation at my grandmothers house. Cooked on the wood logs that charcoaly flavour still lingers on the taste buds.So I thought of making a complete Pahadi dinner for the husband the first time. Unbelievable right?⠀⠀⠀⠀⠀⠀⠀⠀⠀ Recipe:⠀⠀⠀⠀⠀⠀⠀⠀⠀ Aloo ki thichoni (mashed potato curry) & Pyaz ki sabzi (onion dish)⠀⠀⠀⠀⠀⠀⠀⠀⠀ .⠀⠀⠀⠀⠀⠀⠀⠀⠀ Thichoni means to smash something in garhwali, raw potatoes are smashed with a silbatta traditionally but here i did it in a mortar n pessel.Yes it takes longer but its worth the effort.⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients you need: 3 raw potatoes mashed in a mortar n pessel, 2 tomatoes grated, zakhya or rai seeds for the tadka, some mustard oil.⠀⠀⠀⠀⠀⠀⠀⠀⠀ .⠀⠀⠀⠀⠀⠀⠀⠀⠀ Heat mustard oil in a pan, add the rai seeds when hot.Add the mashed potatoes, saute them for a minute and add the tomato puree. Add salt, red chilli powder and turmeric. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ .⠀⠀⠀⠀⠀⠀⠀⠀⠀ Saute again for a minute and add water. Cook till the potatoes are cooked nicely, adjust the gravy accordingly.⠀⠀⠀⠀⠀⠀⠀⠀⠀ .⠀⠀⠀⠀⠀⠀⠀⠀⠀ The next recipe is usually a breakfast or a side dish along with rice.⠀⠀⠀⠀⠀⠀⠀⠀⠀ Pyaaz ki sabzi⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients you need: two onions sliced longitudinally, zakhya or rai seeds, salt and turmeric, mustard oil.⠀⠀⠀⠀⠀⠀⠀⠀⠀ .⠀⠀⠀⠀⠀⠀⠀⠀⠀ In a pan heat some mustard oil, add the rai seeds and add the onions.Saute them and add salt and turmeric. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ . ⠀⠀⠀⠀⠀⠀⠀⠀⠀ You dont want to make them golden brown, they should be caramely so add sprinkle of water and half a cup of milk.⠀⠀⠀⠀⠀⠀⠀⠀⠀ .⠀⠀⠀⠀⠀⠀⠀⠀⠀ Simmer it till the onions are nice translucent and creamy.⠀⠀⠀⠀⠀⠀⠀⠀⠀ .⠀⠀⠀⠀⠀⠀⠀⠀⠀ Enjoy with a plain parantha or rice. 🙂

Bhaat ( cooked rice)🍚 is constant for all pahadi meal days. Today was a day for Gehet dal patudi ka PHAANU( a gravy preparation made from soaked grinded lentil),🍲 the Pahadi gravies have such a unique flavour with a crunchy tadka of jakhya seeds and a teaspoon homemade ghee on top! I have to say... This Garhwali chicken curry is hands down the best chicken curry I've EVER made. Simple spicing, slow cooking, not a tomato in sight.. (it was hard to get my own head around not using tomatoes...but tomatoes were not available in the hills and a lot of traditional dishes use alternative souring agents. This uses aamchur.) I love tomatoes, they bring nuance to many dishes, but this dish made me break that stereotype. It makes me think we tend to use them blindly, and lose the nuances of our traditional cooking and recipes in the process! . Even Chicken is not eaten traditionally. It took a lot of research & I only got a description from one of the mausajis of this chicken curry he once ate at a guest house to develop a recipe from. But all the work has been worth it. This curry had so much flavour! And not of the gravy, the chicken tasted so good too!
