Looking for a fun way to incorporate seasonal squash and more veggies into your meals? Try this VEGAN SPAGHETTI SQUASH LASAGNA! I promise you, it’s 🔥🔥🔥 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Lasagna was one of my favorite meals growing up. However, since dairy and wheat aren’t compatible with my body, I haven’t had it in years. This dish is great as a side or on its own and perfect for the cooler weather. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ To make the VEGAN SPAGHETTI SQUASH LASAGNA, you will need: • 1 spaghetti squash • @miyokos_kitchen vegan mozzarella • 1 jar @raoshomemade marinara sauce • 3-4 cups chopped Swiss chard • Fresh chopped basil (top) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Pre-heat oven to 400°F. Cut the spaghetti squash lengthwise from stem to tail and scrape out the seeds and stringy bits of flesh. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Place the squash halves face down in a roasting pan and add enough water to lightly coat the bottom of the pan. Cook 30-40 minutes or until squash is tender. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ When the squash is done, remove from oven and let cool for 30 minutes before handling. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Next, lightly grease a 9x13 casserole dish with a bit of coconut oil. Start by creating the base layer with one half of the spaghetti squash (use a fork to scrape out strands). Spread squash evenly (semi-compact) followed by a layer of @miyokos_kitchen mozz. I used half the cheeze for the first layer and the other half for the second layer. I layered the cheeze chunks out about 1 1/2-2 inches apart. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Next, chop up ~1 1/2 cup of Swiss chard and lay evenly over the spaghetti squash and cheeze. Pour 1/2 a can of @raoshomemade marinara sauce over the Swiss chard. This is all the “first layer.” ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Repeat the above steps to create the “second layer” starting with the other half of spaghetti squash. Make sure the top layer is sauce. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Cover the dish with a small baking sheet (could cover the dish with foil but I don’t use aluminum in cooking) and bake for 20 minutes at 400°F. Next, remove the sheet/foil and bake for an additional 10 minutes uncovered. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Once done, turn the oven setting to HIGH broil and cook for ~2 minutes (this gets the mozz browned and bubbly). ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Remove from heat and let cool. Top with fresh basil. Enjoy!

First picture I had recently gained quite a bit of weight, I’ve always been overweight, but this was near my highest weight because sometimes that just happens when you start dating someone (well we were married, but you know what I mean) In 2014, I was pregnant with my daughter and this picture was taken right at 6 months pregnant right before I went into the hospital at 27 ish weeks and had her at 29 weeks. (She’s a healthy wild 4 year old) Fast forward about 2.5 years and I lost 100 pounds and wanted to have another baby, so ➡️ baby #2 left me with a 37 pound gain and now I’m here today trying to lose it! Whilst chicken breast is handy for a lean source of protein unfortunately it lacks vital nutrients to optimise a host of functions in the body. — Additionally, in the wild with predator animals. They would prize and fight over organ meats and bone marrow instead of muscle meat. Perhaps they knew how powerful these cuts were? — 🐓 Chicken Breasts; They do a good job and taste fine. They contain the appropriate calories and protein. They take on flavour well but they also lack Any Micro Nutrient Substance to them! They are extremely lean and from a Paleo Evolutionary standpoint we would not have an abundant supply of Lean Protein sources which may lead to a methionine rich balance of amino acids without glycine based protein sources to counteract. Today officially marks 3 weeks straight of running and exercise for me, from doing none for the past 15+ years lol. I’ve lost a little more weight, but the real difference I’ve noticed is my stamina. Even after losing the 100lbs on keto, I was still very easily winded. When I started this, I was doing a 15 and a half minute mile, and I’ve gotten that down to 12 minutes in this short time. Still a long way to go, but it’s encouraging to see and feel the progress. It’s pretty mild out today, so I’m gonna hit up the neighborhood for the next hour and a half. IT'S TIME TO START LIVING AGAIN 💚 TESTIMONY 👇 My husband, Dan, and I are both 70 yrs old and have more energy and feel better than we have in years!! We accepted the 30 Day Challenge 2 yrs ago when we were both 25-30 lbs overweight, feeling sluggish/fatigued, having too much indigestion, body aches/pains...I was having headaches everyday, not sleeping well, our cholesterol, blood pressure #’s were rising...🤔😳! Dan was diagnosed with cervical dystonia and anticipating rotator cuff surgery....😔. He puts on numerous seminars and speeches with his work and was thinking of quitting because of lack of clarity and the head shaking(cervical dystonia)..... We both assumed all of our problems were just age related ... WOW! We were so wrong....just a couple of weeks into the 30 Day we were both feeling better, more energetic and sleeping better. My headaches were gone, we both quit taking Advil & Zantac everyday...Dan said he felt more clarity! After a few months of continuing clean eating and avoiding sugar, gluten, dairy, soy, wheat, processed foods ....Dan’s head shaking had almost disappeared and his shoulder pain gone! We each lost 25-30 lbs and feel absolutely great everyday!! We leave this weekend for 3 weeks on the road with him putting on 5 all day seminars!! Add more seafood to your diet can be great as items like shrimp contain essential fatty acids, iodine and selenium. Shrimp is also low in fat and a high complete protein source. . Seafood is easily digested. This is a great low carb option for those who prefer this style of eating. Zoodles are also one of the quickest ways to cook vegetables and is one of the reasons l love this method. . This was all cooked in one pan on a wok. Cooked under 15 minutes. Double up the recipe to serve more. . Ingredients. 1 tbsp extra olive oil or avocado oil 1 large courgette/zucchini Large handful of kale or other fibrous green 1 plum tomato 175 grams wild tiger prawns ( do not consume farmed fish! Usually contaminated and are fed antibiotics! Save money and buy frozen wild shrimp) 1/2 avocado .... 1. Preheat pan to medium add 1/2 tbsp of the oil. 2. Add the spiralised courgette and sauté for 5 mins until softened. 3. Add the kale and continue until softened. 4. Remove the veggies from pan. 5. Add the other 1/2 tbsp oil. Add the prawns and cook until cooked through approx 4 mins. 6. Remove from heat. 7. Juhu am Montag zeigte die Waage 4kg weniger 😍💪 jetzt geht's richtig voran mit Kilos purzeln. 😍😍😍 Das ist ein Frühstück von dieser Woche. Irgendwie mag ich zur Zeit kein #porridge 🤔 wenn es ich im Laufe des Tages Joghurt oder Quark mit Beeren und Haferflocken, Leinsamen und Chia. Naja ich finde das auch ein gutes Frühstück mit Vollkornbrot,Ei, Gemüse,Kaffee😍 und natürlich wieder den Mikronährstoffen (wie bereits im 1.Post erklärt,alle Infos auf den verlinkten Seiten😇) @morenutrition.de @lavita_de Nicht wundern,der Schinken ist so dunkel,weil der Salat darunter durchscheint 😉 Erstaunlich auch immer wieder wie sich der Appetit und Hunger verändert,hab keine Heißhungerattacken und auch wenig Lust auf Süßes. Hab seit 2Wochen Gummibärchen hier,wo ich wirklich immer nur Mal 4-5Stück esse und super ist auch 70%Schoki. Die ist nicht zu bitter und trotzdem nicht zu süß. Da reicht ein Stück genießen 😇🙏❤️ So kann's weitergehen.
