4 ingredient peppermint bark 🌱🍫 melt 1/2 cup chocolate chips and spread melted chocolate onto a parchment paper lined flat surface (I used the lid of a rectangular storage container). Place in freezer. Next, melt 1/2 cup coconut butter + 2.5 tsp coconut oil. Once melted, stir in 6 drops @youngliving peppermint essential oil. Remove chocolate from freezer and pour melted coconut/mint mixture over the frozen chocolate layer. I created swirls by gently dragging a utensil along the bottom chocolate layer as I spread the coconut/mint layer over the top. Place in freezer to solidly fully for about an hour. Remove, break into chunks, and enjoy! Store in freezer 👅👅

Saturday’s are for poached eggs and avocado toast 🥑🥂⁣ ⁣ If you’ve never made poached eggs, stop what you’re doing and head to the kitchen 👉🏻 They’re delicious (especially when paired with avo toasted) and are actually WAY easier to make than you probably think. ⁣ ⁣ 1. Add water to a saucepan, enough to fill about 4 inches up the side of the pot on medium-low heat.⁣ 2. Add a tbsp of white vinegar to the water.⁣ 3. Bring water to a simmer.⁣ 4. Crack egg into a smaller bowl (crack each egg separately).⁣ 5. Stir the water to make a swirling vortex. ⁣ 6. Add the egg(s) and cook for about 3 minutes. ⁣ 7. Lift eggs from water with a slotted spoon and let drain in the spoon or with a paper towel.⁣ 8. Sprinkle with toppings of your choice and place on avocado toast.⁣ 9. The Mama Muffin (happily named by my 3.5 yr old). . I don't know about you, but I love a tasty muffin on a rainy day with a nice cup of coffee or tea. . This recipe has 3 cups of veg, 1.5 cups of fruit, is Gluten Free and Dairy Free! It can also be made Vegan and/or Nut Free if desired. . Toddler Approved! I hope you enjoy as much as we do! . . Recipe: 4 lrg carrots = 3 cups grated (organic preferred) 3 lrg apples = 1.5 cups (organic preferred) 5 eggs beaten – from pasture raised hens ½ cup extra virgin olive oil ½ tsp vanilla extract (alcohol free) ½ cup unsweetened oat or nut milk 2.5 cup gluten free flour 1 cup rolled oats 1 cup coconut sugar 3 tsp baking powder 1 tsp baking soda ½ tsp himalayan salt (or sea salt) 1 tbsp cinnamon ¼ tsp nutmeg Topping: In a small bowl mix 2 tbsp oats and 2 tbsp coconut sugar with ¼ tsp cinnamon. . Fold in 1 cup of raisins and 1 cup chopped pecans. . In a Large bowl mix carrots, apples, vanilla, beaten eggs, oat milk, and oil. . In a medium bowl mix flour, oats, coconut sugar, baking powder, baking soda, sea salt, cinnamon and nutmeg. . Add the dry ingredients to liquid ingredients and mix well. . Fold in 1 cup of raisins and 1 cup pecans. . Scoop into a silicone reusable muffin cups. . Add a sprinkle of topping mixture to each muffin. . Bake at 350 for 20-23 minutes or until a toothpick comes out clean. . Makes 24 muffins that freeze perfectly! . To Make Vegan use an egg replacement like Chia Seeds/Water To Make Nut Free – Don’t use nuts. . Replacement for 1 egg: 1 tbsp chia seeds with 3 tbsp water. Let sit 15 minutes.

I feel like these pancakes look kinda Christmasy! Which was totally an accident 😂 • Usually I never make the same pancake recipe twice. I just kinda throw everything in a bowl and hope it works out. Here’s today’s experiment because they’re actually really yummy 😍 • 1 c. @bobsredmill gluten free flour blend 1 tbs. @pamelasproducts baking powder 1 scoop @vitalproteins collagen 2 eggs 1/2 c. Milk of choice (plus a little extra to thin the batter if necessary) 1 tsp. Vanilla 1/2 tsp. Apple cider vinegar 3 Tbs. melted grass-fed butter 1/2 tsp. Salt • I topped them with Greek yogurt, almond butter, fruit, coconut, hemp seeds, and maple syrup.
