Smoked salmon with dairy free chive cream cheese on toasted rye with capers, a hard boiled egg, half an avocado and arugula topped with marinated tomato and cucumber salad made with olive oil and red wine vinegar. Happy Monday! I get a lot of questions about what I usually like to meal prep or my go to meals on those busy days. Usually I just stick with salads when it comes to meal prepping. I chop up the veggies I want and then add in a source of protein, fat, carbs (if I use a protein source with no carbs like chicken): ✅Protein- corn and beans, quinoa, or chicken breast ✅Fat: avocado, walnuts, tahini or olive oil ✅ Carbs: grains (rice, bulgur, quinoa, etc), beans Other stuff: lemon, seasonings, apple cider vinegar - Lately, I’ve been doing corn-bean salads since I don’t have to cook anything and it’s so quick. I also meal prep a salad for the next 2-3! This salad is an example of what I usually meal prepare (in fact, I’m having this for lunch today and tomorrow 👌🏼) days and pair it with a snack (fruit or veggies). All of this really just takes me 15 minutes 👌🏼 - VEGGIE-LOAD SALAD 2 servings —> Ingredients: ✖️Parsley ✖️Red Cabbage ✖️1 tomato ✖️Black Beans (canned; rinsed and drained) ✖️Corn ✖️1 carrot (grated) ✖️Celery ✖️Cucumber -dressing ✖️1/2 lemon ✖️1 tbs apple cider vinegar ✖️2 tsp olive oil ✖️1 tsp oregano ✖️1/2 tsp paprika ✖️1/4 tsp Himalayan salt (optional) —> Directions: 1. Prepare your veggies and dressing 2. Combine and mix until well combined

Simple Cinnamon Oatmeal 1/3 cup rolled or quick oats 1 tbsp ground flax seed 1/2 tsp cinnamon Pinch of salt 1 ripe banana, sliced up 1 cup unsweetened almond milk 🥣 . Combine on the stove top and stir until slightly thickened, about 3 minutes. Top as desired when serving. 🌸

Breakfast: Egg and cheese wrap and bananas and strawberries 💪🏿 ____________ Did you know that you’re supposed to eat 9 servings of fruits and vegetables everyday? ___________ What I do is snack on fruits and vegetables throughout the day. I think fruits have more grab and go options, so you might find it easier to incorporate throughout your day. I’d rather have cooked veggies than raw, so I add veggies to anything that I can. I might sauté some tomato and mushrooms to add to my eggs. Bam, 2 servings down. If I am rushing and cannot cook vegetables, my favorite veggies to eat raw are bell pepper and carrots. I usually dip bell peppers and carrots in some hummus 😋. Smoothies are also a great way to get some veggies in your day too. Spinach is my ultimate go to, but you can also add celery and even carrots. I think the best way to start eating fruits more regularly is just buying a bunch of fruit and designating that as your snack for the day instead of chips. Siiiiiiiii, yo también me he dado cuenta. Hoy traigo plato repetido, pero ¿y lo bueno que es dejarse cocinado de un día para otro? ¿Y el gustico que da llegar a casa y comer en 5 minutos? Y claro, si es un platico de migas... ¡Puf! Se me olvida la mañana en un segundo. 😉 ¿Os había dicho ya que me chiflan? 🤔 ¿Sabéis cuál es el supertruco de los lunes? Los domingos me gusta hacer un plato contundente, de los que gustan mucho y comemos poco, bien porque sea una bomba o porque sea muy laborioso. Normalmente hago para 4, y así el lunes, aunque no haya un pimiento en la nevera, comemos a gusto, descansamos un poco y... ¡A la compra! I had this bowl for lunch earlier today with rice, homemade falafel, cucumber, tomatoes, peas, avocado, blueberries and spinach. . Falafel recipe 1 can chickpeas 2 tbsp tahini 2 tbsp brown rice flour 1 tbsp coconut aminos 1 tsp cumin 1 tsp turmeric 1 tbsp water Preheat oven to 200 degrees C/390 F. Add the ingredients to a blender or food processor, and blend until smooth, adding more water if necessary. Form into falafel shapes and transfer to a sheet of greaseproof paper. Bake for around 25 minutes, and serve."
