The sunshine is hiding away right now, and truth be told, I am feeling a little tired and emotional today! ๐Ÿ’” I ate the mother of all nourishing salads for my lunch; tonnes of greens (chard, lettuce, spinach, avocado and Japanese seaweed) with some light protein (king prawns, one free range egg and a handful of raw pine nuts), a huge shot of energising vitamin C (fresh lemon juice) some key nutrients (herbs, spices and unprocessed pink Himalayan salt) and a little healthy fat (extra virgin olive oil). And then......I decided it was time for a little treat ๐Ÿ’• Enjoying a healthy treat every once in a while is not wrong. I actually believe it to be an integral part of a healthy lifestyle. How we feel emotionally, and how we treat our hearts as well as our bodies, is key in the lifelong journey weโ€™re all on to enhancing and strengthening our bodiesโ€™ natural health. Incorporating some healthier treats and sweets into our lifestyle - if they donโ€™t cause you to feel poorly, of course - is a wonderful way to bring a little fun and variety into our week. Also, for us ladies, we all know that that when โ€˜that timeโ€™ of the month rolls around, we naturally crave a little more sweetness than usual, right?! Enter: my super creamy, frothy, decadent chestnut-hazelnut chocolate milkshake ๐Ÿ˜ Simply throw 6 whole, peeled, fresh chestnuts, 60g skinned hazelnuts, 1 tbsp antioxidant-packed gorgeous raw cacao powder, and a generous pinch of mineral-rich pink Himalayan salt into your blender. Add 200g pure, full-fat coconut milk into the mix. Add a handful of ice cubes and around 250-300ml very cold water. Finish with 1-2 tbsp organic maple syrup (sweeten to taste; the chestnuts are naturally sweet, so it doesnโ€™t take much!) and blitz for 30-40 seconds (if youโ€™re not using a high-speed blender it may take a smidge longer) until totally smooth and silky. This recipe creates two servings of delicious chocolate milkshake with absolutely no refined sugar, dairy, soy, artificial sweeteners or preservatives. What is your favourite healthy treat? Oh my gosh......this was the Emperor of all dinner salad bowls, and I have eaten the whole thing!! ๐Ÿคค๐Ÿ˜๐Ÿฅ— After quite an active day, I was HUNGRY for some truly satiating, nourishing, fresh and filling dinner. I boiled a few cubes of butternut squash just for twenty minutes, drained them, and added a few pinches of ground garlic, smoked paprika, pink Himalayan salt, rosemary, basil and thyme, plus a teaspoon of organic extra virgin coconut oil, before gently mixing and tossing it all together. I also steamed some asparagus tips, leeks, and half a red bell pepper, for six minutes. All that was needed after that was to start with a handful of mixed leaves, to which I added my steamed veggies, and then my herby spicy squash. To that I added one fillet of delicious smoked salmon, and a handful of wild king prawns.....a squeeze of lemon juice and a few dollops of raw basil pesto, a handful of organic pine nuts and a sprinkle of @clearspringuk nori flakes (seaweed!) and I was good to go!! Let me tell you something. I feel GREAT right now ๐Ÿ™Œ๐Ÿป I feel full, but not bloated. I feel fresh and light and satisfied. Fresh veggies are so healing, energising and rejuvenating!! ๐Ÿƒ๐Ÿ™๐Ÿป Why not try adding a few extras to each of your meals? All too often I think we feel like we either need to immediately switch to being (for example) a full-on raw foodist, or just continue eating nothing but rubbish every day, and that there is no in-between, that nothing in the middle of the spectrum really counts for anything. But I totally disagree. All changes, no matter how small, are important and valuable. ANYTHING fresh, real, whole and unprocessed that you can put into your body is going to have a super positive effect on your health, and when you add up lots of individual healthy moments, you eventually end up with a healthy lifestyle, that develops easily and naturally as time goes by. You can show your body some love, one forkful at a time.....itโ€™s a journey, not a sprint, and I am here for every single one of you!! Our yummy dinner tonight! ๐Ÿ’š I gave the chicken breasts a good herb and spice rub (smoked paprika, ground garlic, rosemary, basil and thyme) with a drizzle of extra virgin olive oil, and roasted them in a hot oven for 40 minutes, in an oven dish on a roasting rack. The sides were steamed mange tout and spring onions, along with smashed sweet potatoes with extra virgin coconut oil, smoked paprika and a little pink Himalayan rock salt. One dollop of delicious raw basil pesto, and that completed this delicious dinner plate! Sometimes, only a big plate of hot, salty chips will do.....bona fide English girl here, party of one! ๐Ÿ™‹๐Ÿปโ€โ™€๏ธ๐Ÿงก This is a super simple, extremely nutritious, insanely delicious snack, plus, itโ€™s very easy to make. I simply chopped up one whole sweet potato - rich with B vitamins, vitamin C, magnesium, phosphorus, copper, manganese, vitamin A and lots of healthy fiber - into super fat chips, and roasted them for 30 minutes in a medium heated oven. Well hello there, delicious little light lunch!! ๐Ÿ’š I havenโ€™t eaten any @rawvibrantliving grain-free crackers for a good long while, but when I saw them on offer in @hollandandbarrett I just had to bite! These delicious crackers are made from sunflower seeds, golden flaxseeds, beetroot, lemon juice, mustard seeds and pink Himalayan salt - all organic. Sometimes crunchy crackers just hit the lunch-spot for me, and itโ€™s wonderful to find some that are made from such good quality ingredients, and which are totally gluten and grain free into the bargain โ˜บ๏ธโœŒ๐Ÿป I enjoyed my yummy crackers with some nitrate-free prosciutto, two slices of @violife_foods โ€˜originalโ€™ dairy and soy-free cheese, and a dollop of my favourite @seggianolovesfood raw basil pesto ๐Ÿƒ I realise that much of this is technically โ€˜processedโ€™ and I am a huge advocate of not eating processed foods! However, a large part of avoiding processed foods is avoiding the junk that generally goes into them. Nothing on this plate involves processed junk - it is all made from whole, organic ingredients. The cheese is definitely more processed than the rest, but it is totally free from unhealthy oils, additives or stabilisers. Would I eat โ€˜healthyโ€™ processed cheese every day? Absolutely not. Fresh, totally unprocessed veggies, meat, fish, nuts and seeds are still and will always be the staples in my diet โœŒ๐Ÿป But is this โ€˜cheeseโ€™ a good option for an occasional healthy treat? Absolutely!! I would also have no problem eating the pesto or the crackers every day, because they are made from 100% whole, unprocessed, organic ingredients: no heating or treating, no added chemicals or removing of any essential nutrients. It was time for a really huge green salad this evening!! ๐Ÿ’š Over the last week I have very intentionally been eating and resting in a way to encourage my body to feel more balanced - since the change in the weather and a rise in some unpleasant CFS and fibromyalgia symptoms over the last week - and finally today I began to feel like I had a bit more energy, less muscle pain, and more emotionally grounded โ˜บ๏ธโœŒ๐Ÿป So I simply continued with more of what Iโ€™ve already been doing: I kept well hydrated all morning, and then made spiced roast chicken with sweet potatoes and steamed broccoli, courgettes and red bell peppers for lunch. Lots more water throughout the afternoon, and now this delicious, fresh, nourishing salad of mixed leaves (rocket, spinach, chard and red lettuce) with celery, avocado, cucumber, diced raw ginger (an amazing natural anti-inflammatory), organic crushed Japanese nori (seaweed), and some leftover roast chicken. Hello, beautiful breakfast! ๐Ÿ’š Hot smoked salmon and free range eggs cooked in extra virgin coconut oil, with heaps of diced cucumber, fresh basil, a sprinkle of sesame seeds and a squeeze of fresh lemon juice. If you struggle with fatigue, muscular pain or heaviness, foggy mind or energy in general, why not give a more protein-rich breakfast a try? Protein gives us slow-release energy without spiking our blood sugar, especially when paired with a little healthy fat, and keeps us feeling fuller for longer. I also love to add in lots of greens. Restaurant recommendation coming to you all today!! ๐ŸŒŸ Should you find yourselves traveling to or through the Harrogate, North Yorkshire region of the UK for any reason, and should you be the kind of person - like myself - who often struggles to find allergy friendly food on the go, this is UNQUESTIONABLY the place to visit!! Eating out with a super restricted diet can be tough. I am a huge advocate of calling ahead, asking questions, and working meals out in a friendly and clear way with whichever place you plan to visit, so that you donโ€™t have to miss out on fun social events - but!! I know I am right in saying that we have all had those experiences which, whether owing to irritable staff, insensitive questioning or food which ended up adversely affecting us anyway, made us swear to never eat out again ๐Ÿ˜ฃ This place, however, is different. Putting aside the fact that before you even speak to a single staff member you are greeted with a light and airy interior, soft cushioned wicker chairs, large green plants and more fluffy, snuggly blankets than you can throw a stick at, every single word that was exchanged between myself, my parents and the staff here was kind, pleasant, reassuring and genuinely caring ๐Ÿ’• Our waitress was a little gem!! She asked helpful questions, made suggestions, and pulled together three meals out of thin air which were filling, delicious, and which totally met our requirements. Both myself and my Mum have serious health issues which come with multiple intense food sensitivities; my Dad is allergic to bell peppers - none of which was an issue to our SuperWaitress!! I was presented with the most succulent and delicious grilled salmon fillet I have ever tasted. Accompanied by winter vegetables (onions, squash and carrots) roasted in olive oil, and delicious sweet potato fries - also cooked in olive oil - the warmth of a little black pepper added to the perfection of this meal. My Mum was given the most enormous piece of perfectly cooked cod I have ever seen, along with a mountain of light and fluffy mashed potatoes, and my Dad had a beef, cheese and bacon burger. Say hello to this super sunshiny and delicious omelette, the perfect brunch for a grey and drizzly English Thursday ๐ŸŒงโ˜€๏ธ Simply dice up half a courgette, and one already-cooked fillet of salmon.* Pour 1-2tsp extra virgin olive oil into a large saucepan over a medium-heated hob. Add in your courgettes and salmon pieces, and toss them every moment or two with a spatula. In between flipping your courgette and salmon pieces, crack two free range eggs into a mug or dish, add 1/4 tsp smoked paprika and 1/2 tsp ground garlic, and whisk them up with a fork. When the courgette and salmon pieces have softened, and the sides of the courgette have turned golden brown, pour your whisked eggs over the top. Turn the heat to medium-low and allow the eggs to bubble. After a minute or two you should be able to easily slide the base of the omelette around in the pan - at that point, either flip the omelette if youโ€™re feeling brave, or slice it into quarters and flip the quarters individually! Another thirty seconds to โ€˜sealโ€™ the eggs on top, and you are done. Serve in a dish with a little dollop of melted extra virgin coconut oil over the top and a shake of Himalayan pink salt (or @avogeluk_health Herbamere herb and spice blend, if you have any!) and enjoy with a nice hot mug of peppermint tea. This delicious omelette contains an abundance of vitamin-rich courgette, healthy omega-3 rich fats, loads of protein, and tonnes of flavour. I made this incredible, colourful bowl of raw veggies for brunch this morning, and it was SO delicious!! ๐Ÿ˜๐Ÿ’š Green bell peppers, carrot sticks, crunchy celery, and creamy hass avocado was my base. I then dressed this pretty little bowl of goodness with some lovely fresh lemon (juice and shapes!), a drizzle of extra virgin olive oil, a shake of @avogeluk_health Herbamere, 1/2 tsp @zaytoun_cic Zaโ€™atar Zesty Thyme Herb Mix, a sprinkle of raw sesame seeds, and a dollop of @seggianolovesfood raw basil pesto. The combined flavours were insane! ๐ŸŒˆ Colourful, fresh veggies naturally contain a huge wealth and variety of vitamins and antioxidants, all of which serve to boost the immune system and keep our bodies functioning optimally. They give us energy and help us to stay fit and well, especially now as the weather is turning colder; we need all the health boosts we can get! Simply put - when I eat my veggies, I feel really good ๐Ÿ’š Whatever way of eating you subscribe to, the simple fact is that including as many fresh veggies and fruits as your body is happy with into your everyday meals and snacks can only be a good thing. Chinese-style cauli prawn fried rice anyone? ๐Ÿš๐Ÿค๐Ÿฅก This deliciously light yet filling dish is super easy to make!! And one of our favourites ๐Ÿ’š Simply pour 1tsp extra virgin olive oil into a wok and turn up the heat. Add in half a leek and one wild garlic clove - both diced - along with 250g chilled king prawns and a squeeze of fresh lemon juice ๐Ÿ‹ Toss them up until sizzling, then turn the heat down a little and let them simmer. While you wait, wash and dice up one red bell pepper, a few leaves of dark green kale and a handful of cherry tomatoes. Wash the mange tout (snow peas if youโ€™re in the USA!) but thereโ€™s no need to dice. There will likely be some excess liquid in the bottom of the wok at this point - carefully drain it off (a large pan lid does the trick for me!) and return it to the heat. Add in your other veggies, plus a shake of ground garlic, paprika, mixed herbs, powdered onion, and Chinese five spice, then toss and stir them all together until sizzling hot!! Once they all look like theyโ€™re shiny and cooked up nicely, add in two tubs of fresh cauli rice (I get mine from Aldi - if youโ€™re making it from scratch, you want to aim for about 600g all in) then more of the above mentioned spices. At this point, go heavy on the Chinese Five Spice blend (star anise, cinnamon, fennel, black pepper and cloves for anyone who wants the breakdown) - 1-2tsp to really bring the warmth of the spices through. Finally, before stirring together, add a good 3-4tbsp organic coconut aminos (a soy and gluten-free alternative to soy sauce) and then carefully begin to mix the whole wokful all together. As you mix you will see, feel and smell the ingredients blending together in a fresh and delicious way......once throughly mixed, leave it to sizzle for 5-6 minutes, tossing every minute or so to allow the cauli rice to cook through and absorb the lovely spices and aminos. And thatโ€™s it! Two hearty lunches or dinners, thrown together in under 20 minutes. So last night was Tuesday night, and we all know what that means - it was time for The Great @britishbakeoff !! ๐Ÿ˜๐Ÿ‡ฌ๐Ÿ‡ง๐Ÿฐ Mr K and I headed to my lovely parentsโ€™ home, and my Mum and I spent a good few hours in the kitchen together which was SO much fun (she has an amazing stand mixer, which she taught me how to use, in order to create the perfect pastry!) and I whipped up some special treats in honour of GBBO Danish week!! So in true Becki form, I somewhat created as I went along. I had an idea in my head of what I thought I was doing, and something a little different emerged - but thatโ€™s ok! As I said a couple of weeks ago, the fun part of baking for me is being creative and seeing what comes out. I wanted to make an homage to the Danish pastry, but was fascinated by the thought of using a choux pastry base for my Danish toppings. As it turned out, these delicious grain, gluten, dairy and refined sugar free choux pastry buns (thank you @theurbanposer for the original choux recipe; I added vanilla beans and a little ground coconut sugar for extra sweetness) were tall, golden and incredibly light and puffy! So I took them out of the oven near to the end, scooped out the middles, and stuffed them with either homemade blueberry and blackberry jam, or sweet, salty and spiced caramel pecans. Popped them back into the oven for the remaining ten minutes, then left them to cool, before drizzling with my homemade caramel sauce, and adding a sprinkle of homemade icing sugar (I just blitz arrowroot with coconut sugar until it turns powdery - trade secret!). Mr K and my Dad gave them a 9.5 / 10 - Mr K wanted โ€˜more pastry!โ€™ and Dad liked the jammy pastries a little less than the pecan ones (hello, soggy bottoms - oops) but everyone has requested more of the pecan pastries for Christmas, as they were spiced with a yummy blend of cinnamon, nutmeg, ginger and cloves. All in all, I consider last nightโ€™s Bakeoff to have been a success!! Because who doesnโ€™t love sweet, sticky, fruity, crumbly treats on a Tuesday night? Last night we had such a delicious dinner, I had to share!! ๐Ÿ˜ It was pretty simple to make too. On the right we have a little butternut squash, scrubbed and diced and sprinkled with paprika, then roasted with the skins left on. The skins are extremely nutritious, and SO flavoursome when roasted! - I do not recommend leaving them on to boil though (ick!). Behind we have fresh broccoli, leeks, and shiny red bell peppers; washed and diced and boiled. Then drained, left to steam dry for a couple of minutes, and seasoned with a squeeze of fresh lemon juice, a shake of @avogeluk_health Herbamere (a delicious and balancing blend of sea salt with savoury herbs and spices) and a sprinkle of organic sesame seeds. Then front and center we have lean pork steaks, which I pre-rubbed with ground cinnamon, a little pink Himalayan salt, and a drizzle of extra virgin olive oil. I simply heated up the griddle dry until very hot, added the steaks to it, and let them sizzle - around 12-15 minutes in total, turning every few minutes until done. If you have a meat thermometer, they should reach 80C before serving. Finally, I made some simple applesauce to go with the pork steaks. I still have a few of the wild apples I picked a couple of weeks left over (they have lasted so well!) so I washed, cored and finely diced them, then popped them into a small saucepan over a medium heat with a splash of boiling water and a sprinkle of ground cinnamon, stirring every so often, for 15 mins until soft. This meal is the perfect warming, nourishing, super nutritious comfort dinner for a cold and rainy evening. It contains a decent amount of protein, a little naturally healing healthy fat, and tonnes of delicious, fiber-rich, antioxidant-packed veggies!! A fruit; it contains seeds like all fruits, but the sugar count is negligible, and so you will generally find it being used as a savoury vegetable) as they are high in many vitamins and minerals: notably, vitamin C, potassium, magnesium, folate, and a wealth of B-vitamins. It is made up of 94% water and so is extremely hydrating, but also contains fiber, protein and healthy carbs to keep you feeling fuller for longer. Plus - and I always believe this to be important - it tastes great! I realise that this is a subjective statement, but letโ€™s be honest; if something does not taste great, we are less likely to eat it. Itโ€™s Tuesday, and we all know what that means - itโ€™s Great @britishbakeoff night, wooh!! ๐Ÿ˜„๐Ÿฐ Those of you who have seen my Instastories this evening will have noticed that I somewhat messed up on the theme for this week! I mistakenly thought that we were in biscuit week, and set about enthusiastically creating a brand new proper English biscuit recipe for the occasion. However, on watching tonightโ€™s episode, I quickly realised that the focus this week is on spices!! Shock!! ๐Ÿ˜ฎ It was not quite the disaster it appeared at first glance to be however; many of the contestantsโ€™ creations were in fact spiced biscuits, and as mine are delicately flavoured with vanilla (a spice, hallelujah!) I feel I may have got away with it!! These are most definitely English biscuits, not American-style cookies. They are sweet, delightfully crunchy all the way through, and they also pass the โ€˜dunk in the teaโ€™ test with flying colours - softening perfectly when dunked, without falling INTO the tea itself (which we all know is the mark of an excellent biscuit!). I am happy and proud to report that these proper biscuits do not contain any grains, gluten, dairy, soy, eggs or refined sugar. They can also be adapted easily for anyone who canโ€™t tolerate nuts, as the only nuts included comprise a couple of teaspoons of cashew milk - which could easily be swapped with your milk of choice. Moreover, they were EXTREMELY easy and speedy to make, took just twenty minutes to bake, and - most importantly - they passed the husband test. Mr K gave them a 9/10 (he is reserving his final point for tomorrow, as he wants to see if they will soften, harden or stay the same by tomorrow evening) and then went back for seconds - a definite win!! I have really been loving baking along with Bakeoff this year. Some of you have been asking for my recipes, and Iโ€™m happy to report that at some point post-Bakeoff, I will be sharing them all with you, plus some extra treats thrown in for good measure!! Here it is: my super delicious, hand-foraged, wild blackberry and apple crumble!! โ˜บ๏ธ๐Ÿ’œ Totally free from grains, gluten, dairy, soy and refined sugar, this naturally sweet, comforting treat was the perfect dessert accompaniment as Mr K and I enjoyed this weekโ€™s episode of the great @britishbakeoff ๐Ÿฐ Check my Instastories and my previous post to find out how I came by all this delicious, organic fruit - letโ€™s just say itโ€™s been an exciting, fun, abundant evening of foraging for this girl โ˜บ๏ธ๐Ÿ™๐Ÿป I used a blend of arrowroot flour and unsweetened, shredded coconut for the bulk of my crumble topping, and sweetened it up with a little organic maple syrup. This dessert is by no means โ€˜sugar-freeโ€™, but is 100% free from refined, processed or artificial sugar, and so it works for me in small, delicious portions!! As you can see in the second photo, I served this crumble with a little homemade coconut pouring cream - absolutely perfect for me๐Ÿ‘Œ๐Ÿป .....although it has to be said that my lovely Mr K had a hankering for some ice-cream with his, and sadly we had just run out!! ๐Ÿ˜ฑ Thereโ€™s so much crumble left over though, Iโ€™m sure I can whip up some ice-cream to satisfy his chilled crumble cravings before the week is out ๐ŸจโœŒ๐Ÿป๐Ÿงก Did you make a dessert tonight for the Great British Bakeoff? What a gorgeous early evening it has been! ๐Ÿ’› Despite still not being 100% well, I took a pot and a bag and went for a gentle little wander close to home. We live in rural England, and itโ€™s definitely the time of year for successful foraging ๐Ÿ I came home with LOADS of fresh blackberries, a huge bagful of wild apples, rosy cheeks and a happy heart......I canโ€™t express how much I have missed just being outside these last two weeks, and this was quite the welcome back to the great outdoors ๐Ÿ˜๐Ÿ™Œ๐Ÿป Fruit picking reminds me of some super happy childhood moments, and thereโ€™s something very special to me about going deep into nature, picking food straight from the earth, and then taking all that raw life and health into my body. Itโ€™s that time of year again - the Great @britishbakeoff is in full swing!! ๐Ÿ˜ As usual, I have taken it upon myself to create some delicious grain, gluten, dairy, soy and refined sugar free versions of one of their challenges each week, and this week was cake week ๐Ÿฐ I chose to make a double-chocolate sponge tray bake with creamy chocolate vanilla frosting, and OH MY GOSH it was good!! ๐Ÿคค Mr K gave them an 8.5 out of 10, as he really liked them, but said they were a bit โ€˜too cacao-yโ€™ for him!! For me however, itโ€™s always a case of the more chocolatey the better, so I am in double-chocolate heaven right now ๐Ÿ˜ Iโ€™ll reduce the cacao content next time I bake these - for ordinary humans who donโ€™t have pure cacao running through their veins!! - but all-in-all, Iโ€™m happy with how they turned out: soft, moist, rich, delightfully springy sponge cakes, topped with the ultimate thick, sweet, creamy chocolate frosting - made with homemade chocolate chips no less! โ˜บ๏ธโœŒ๐Ÿป Do you watch the Great British Bakeoff? Look at this delicious, colourful salad!! ๐Ÿ˜ I decided to create a fresh, crisp salad for a fresh new week within a fresh new month. For me, September is a time for new beginnings, new projects; to refresh the year for a new season of life โ˜บ๏ธโœŒ๐Ÿป However, I am feeling a bit worse for the wear today after a fun, action-packed family weekend away, so today has been self-designated as a recovery day. Good, fresh food, soft comfy clothes, and lots of relaxation are on the cards to give this sore body the opportunity to heal well ๐Ÿ™๐Ÿป๐Ÿ’š Diced hass avocado and super-crunchy celery has been dressed with lemon juice, organic flakes of Japanese seaweed, and a pinch of ground garlic, onion, rosemary, thyme and sea salt combined. Next we have a delicious, glistening, ruby red beetroot, boiled and cooled and made delightfully tangy with a squeeze of fresh lemon juice! And finally, some hot smoked salmon; no added nasties. Rich in omega-3 fats for optimum brain health and extremely succulent, salmon is filling yet light - no dressing required ๐Ÿคค Overall this simple dish boasts a healthy balance of nourishing good fats, non-starchy carbohydrates and healing protein, along with a high percentage of minerals, vitamins and free-radical busting, immune-boosting anti-oxidants: all extremely healing. I donโ€™t usually share numbers as I believe in simply enjoying real, unprocessed foods which nourish our bodies and enable us to thrive, but just in case anyone is looking at a dish like this and panicking over a. the fat content or b. the carb content (you would not believe how many private messages I often receive about this!) Delicious, organic ginger tea? Yes please! ๐Ÿงก Ingredients? Thereโ€™s only one in these delicious @thenaturalmkt teabags: organic dried ginger root, wrapped in natural, unbleached, non-GMO, biodegradable brown filter paper teabags! Every other brand of ginger tea that I used to enjoy now also include various other roots, flavourings or fillers with the ginger. Yummy leftovers for lunch today!! ๐Ÿ’š Last night we had hot roasted chicken thighs, with LOADS of delicious roasted rainbow veggies - red onions, courgettes, red and orange bell peppers, plus some diced chives. I tossed everything in smoked paprika and ground garlic, and roasted it all together in a medium-heated oven with a drizzle of extra virgin olive oil. Today I simply added a sprinkle of yummy @avogeluk_health Herbamere (a delicious blend of organic sea salt, herbs and spices) to my cold chicken and veggies, and paired it all up with a strawberry, cherry, guarana and flaxseed smoothie ๐Ÿ“๐Ÿ’ Those of you who have been following me for a while will probably remember that I donโ€™t tend to eat fruit. The fructose has a habit of causing almost immediate pain and inflammation through my whole body, so most of the time I make sure I am eating a bigger diversity of fresh veggies, to make sure that I get as many essential vitamins and antioxidants as possible! However, I am a big believer in listening to your body, and for some reason, this past week I have been CRAVING fruit. I havenโ€™t gone crazy with it - common sense! - but I have been enjoying a little fresh fruit and some fruity smoothies here and there. I have to say that in general, I have been ok ๐Ÿ˜ฎ !! Our bodies are extremely intelligent. They know what they need - and donโ€™t need - and more often than not will find any way possible to let us know. Learning to tune in to what our bodies are telling us takes time and patience, and great deal of self-love, but I do believe itโ€™s possible over time to learn to eat and drink intuitively. One of my favourite comfort dinners, and a real treat for us......delicious, free range boneless chicken thighs, stuffed with @violife_foods โ€˜originalโ€™ dairy and soy-free cheese along with some delicious, organic sun-dried tomatoes, wrapped in nitrate-free prosciutto and oven-roasted in a medium-heated oven......it is SO GOOD!! ๐Ÿคค๐Ÿ˜ We enjoyed these little parcels of fragrant goodness with some smoky roasted sweet potato chips, and a huge green salad - simply baby leaf spinach, diced cucumber, and a squeeze of lemon juice. Brunch!! Made by my lovely Mr K @ebejk .....and now I feel like a Princess!! ๐Ÿ˜๐Ÿ‘‘ Mr Kโ€™s omelettes are legendary!! He whisks up the eggs with an assortment of finely diced veggies (usually organic onions and garlic, plus some bell peppers and whatever greens he finds in the fridge) with some herbs, spices and pink salt, before melting a dob of extra virgin coconut oil into our largest frying pan, pouring in the mixture, covering it with a lid, and leaving it to cook on the lowest heat setting for almost ten minutes. Then he flips it for a final minute or two, and they come out like this - soft, hot, bubbly and perfect ๐Ÿ‘Œ๐Ÿป But do you want to know the very best part about Mr Kโ€™s omelettes? Itโ€™s a cold, drizzly, miserable day here in chilly Rutland today, and I needed comfort food under a snuggly blanket for my lunch!! ๐Ÿ’™ Inspired by @jessandbabyella and her delicious looking scrambled eggs yesterday, I made this little bowlful of fresh, nourishing goodness: spinach, chard and red lettuce, topped with a hot smoked fillet of delicious salmon, two free range eggs scrambled with 1/2 tsp extra virgin coconut oil, a drizzle of evoo, a dollop of delicious @seggianolovesfood raw dairy-free basil pesto, a pinch of pink Himalayan salt, and a sprinkle of chives. Fresh, whole food goodness with a great balance of protein, healthy fats and an abundance of greens (hello, antioxidants!).
