Does anyone know why cauliflower is double the price of broccoli 🤔? That’s a serious question, so if you know please share 😊 ~ I had to make this cauliflower and chickpea curry again, and it did not disappoint. The recipe if you missed it is here: ~ 🍀300g potatoes, washed and peeled 🍀200g cauliflower florets 🍀200g tin chopped tomatoes 🍀200g tin chickpeas, drained and rinsed 🍀1 tablespoon tomato puree 🍀2 large shallots, finely chopped 🍀2 fat garlic cloves, finely chopped 🍀½ cm ginger, finely chopped 🍀1 teaspoon pilau seasoning or madras curry powder 🍀1 teaspoon ground coriander 🍀1 teaspoon garam masala 🍀1 vegetable stock cube 🍀Large handful coriander, leaves picked and stalks chopped 🍀1 tablespoon coconut oil (optional) - Cook the potatoes in a large pan of water for around 10 minutes or until they are half cooked. Drain and set aside. ~ Heat a small splash of water (or the coconut oil) in a large saucepan over medium heat. Add the shallots and cook for 2 minutes until they start to soften. Add the garlic and ginger and cook for further 1-2 minutes, stirring frequently. Add the chopped tomatoes, tomato puree, vegetable stock, coriander stalks and all the spices, cook for around 10 minutes. Stir frequently and if the pan gets too dry, and a small splash of water. ~ Finally add the potatoes, chickpeas and the cauliflower, stir well to coat and add a little splash of water. Turn the heat down to a simmer and cook with the lid on for around 6-7 minutes or until the potatoes and cauliflower are tender. 💚Delicious tofu scramble with soy glazed mushrooms. A delightful combo.💚 The last few days have been a bit draining and I haven’t felt as inspired as I usually do. I guess that’s very normal. Creativity comes in ebbs and flows and we can’t force it. So I took an extra coupe of days off☺️. Hope you are having a fabulous week. 🌱Tofu scramble recipe: Remove excess liquid and pat dry 1-14oz pack extra-firm tofu. Use potato masher to form small curds. In separate bowl, combine 2 tbsp nutritional yeast, 1/2 tsp sweet paprika, 1/2 tsp turmeric, 1 tsp Dijon mustard, 1/2 tsp garlic powder, 1/4 tsp onion powder. Whisk in 1/3 cup soy or almond milk. (Adding milk makes the tofu creamier. For drier texture, leave out the milk.) Sauté tofu until starts to brown. Add spices with milk (if using) to pan. Gently fold over tofu while heating, allowing liquid to evaporate until desired consistency. Salt/black pepper and sriracha to taste. Mix with mushrooms (below). 🌱Recipe soy glazed mushrooms: Cut about 3/4lb crimini mushrooms into approximately 1/8 inch thick slices. Mix together: 1.5 tbsp reduced-sodium tamari/soy sauce, about 2 tsp sriracha, 2 tsp maple syrup. Sauté mushrooms until starts to brown. I’m starting to get very excited about whole foods like I was at the beginning of my plant-based journey. To be honest with you, I got bored mid last year 😩 and just felt like eating the same foods day in, day out. It is a miracle I didn’t show you the same bowls daily 🤣. The cloud has finally shifted, and now I’m getting those newbie feels again 🙌🏾 ~ Today I made this bowl of butter beans (cooked in a tomato sauce with cumin, thyme, cayenne, chervil, and veggie stock), sumac roasted 🍆, steamed kale (should have been spinach, but it disappeared from the fridge 🤨) and brown rice. Vegan lemon cake with cream topping 💛 . 2 organic lemons (juice and peel) 95 g vegan butter 110 g vegan sugar ~ 60 ml almond milk 240 g spelt flour 1 tsp baking powder vanilla 70 ml sparkling water Mix all ingredients together (but not too long, because of the sparkling water). Add the batter into a greased loaf pan and bake for 40 min. (175° C | 350° F). Add frosting (powdered sugar and lemon juice) to the warm cake. 🌱Tofu + noodles in creamy nut butter sauce🌱 Taking the kids hiking today in 9 degrees!!! They’re going to kill me!!!😳 🌱Recipe: Press excess liquid from 1-14oz block extra-firm tofu and pat dry. Cut into about 3/4 inch cubes and bake at 400F until golden brown, about 20-25 minutes. Cook lo mein or rice noodles as per packet directions. Reserve 1/4 cup noodle cooking water. Whisk: 1/4 cup cooking water from noodles, 1/4 cup peanut or almond butter, 3 tbsp low-sodium tamari, 3 tbsp rice vinegar, 1 tsp maple syrup, 1 tbsp minced ginger, 2 minced garlic cloves, 1/4 tsp red pepper flakes, 1/3 cup chopped scallions (white and green parts). ( I kept my sauce oil-free but you can add 1 tbsp toasted sesame oil if desired.) Combine sauce with baked tofu and mix. Heat tofu with sauce on low in saucepan, adding desired amount of noodles into the pan until heated through. Add generous squeeze of fresh lime, chopped roasted peanuts and chili flakes before serving. Salt to taste. Mornings are for making #veganbiscuits. 1 cups whole wheat flour, 1 cup oat flour, 1/3 cup hemp seeds, a handful of sprouted sunflower seeds, 1/2 t baking soda, 1 tsp baking powder, 1/4-1/2t salt, 3 tablespoons nutritional yeast (optional) and a sprinkle of dulse. Add water mixed with a tablespoon of apple cider vinegar. Dough shouldn’t be too wet. Flattened dough on to a floured surface and use a mason jar top or cup to cut out the biscuits.
