You can always find in my kitchen eggplants (sometimes I think I should plant them on my terrace as we’re eating tons of them), spinach, zucchini, sweet potatoes and bell peppers 🥗🍆😍 You need only a few minutes to prepare all of them and then they’re roasting themselves in the oven 🤗 I usually cook more, so I can have them for my lunch the next day. By @stainfinitefood - I found a bag in my second freezer so I feel like I won today 🙃 My method for gnocchi is to quickly sauté on high heat in cast iron then BAKE it on 450 in the same pan and shake it around a few times for about 10-15 minutes. Served this one with some langostinos from TJs...the rest came together in no time! Busy in the kitchen and office today, hoping for a productive afternoon. Happy Thursday! • • • Deets: @traderjoes cauliflower gnocchi (tossed in a little olive oil and sautéed quickly then baked in the heated cast iron on 450 for about 15 minutes or until crispy.) langostino tails tossed in a mix of @sirkensingtons mustard and a little almond milk yogurt. And crispy kale (add spices, toss in a teaspoon of olive oil and bake on 450 in a cast iron pan for about 10 mins. Plus arugula, avo, hemp seeds and tomatoes). Pesto: 1/2 cup lacinato kale, 1/2 cup parsley, 1/4 cup olive oil, 1 tablespoon cashew butter, 1 tablespoon lemon juice, 1/2 teaspoon salt, 2 garlic cloves. Then I woke up and whipped up this breakfast which was surprisingly not sweet! I’m going to Wegmans with the fam, and when I get back imma go run on the track (finally) and maybe do some quicker striders to see how da leggies feel. #homemade egg drop soup in adorable little chicken dishes!!😍 We have been feeling a little on the sick side for the last week, so I finally made some bone broth last night to go with the next few meals. Last night we made kale and sausage soup with coconut milk. Buddy-man thought it was so yummy and ate 3 servings! Today for lunch I was the egg drop soup (so soothing and delicious!) Tonight’s dinner will be old fashioned chicken pot pie soup (without canned chicken soup 🙌🏻) with the bone broth as well! I am so thankful for the benefits of homemade bone broth, and that it complements well with my probiotic and supplement regimen in working together to repair mine and my families gut/immune system. Day 18.....I think this must be the longest time I have gone without alcohol ever! Not to mention wheat, dairy, caffeine, sugar etc! I would never have believed I could stick to it, but I have and it really has not been that difficult. It just requires some adjustment and tweeking here and there. I went for my #morningmile at 7.45 this morning, followed by the Tesco shop, which now takes a bit longer as I am spending more time looking at all the different varieties of fruit and vegetables, to get as many varieties as I can, and particularly those which are good prebiotic foods😂 Today’s calories have totalled c1400. Breakfast was scrambled eggs, smoked salmon and spinach c400 calories. Lunch was left over stir fry chicken and vegetables c400 calories.
