Preparation Time: 20 mins Cooking Time: 30 mins Total Time: 50 mins Makes 4 paninis Ingredients For The Chinese Stuffing 1 tbsp oil 1/2 cup sliced spring onions whites 2 tsp garlic (lehsun) paste 1/2 cup carrot juliennes 1/2 cup shredded cabbage 1/2 cup capsicum (red , yellow and green) salt to taste 1 1/2 tbsp schezuan sauce 2 tsp tomato ketchup 1/2 tsp soy sauce 1/2 tsp vinegar 1/2 tsp sugar 1/4 cup chopped spring onion greens Other Ingredients 4 hot dog rolls 10 tsp butter for spreading and brushing 4 tbsp fried noodles Method For the chinese stuffing Heat the oil in a broad non-stick pan, add the spring onions and garlic paste and sauté on a medium flame for 2 minutes. Add the carrot, cabbage, capsicum and salt, mix well and cook on a high flame for 2 minutes, while stirring continuously. Add the schezuan sauce, tomato ketchup, soy sauce, vinegar and sugar, mix well and cook on a medium flame for 1 minute. Switch off the flame, add the spring onion greens, mix well and keep aside. How to proceedDivide the chinese stuffing into 4 equal portions.Slit each hot dog roll horizontally using a sharp knife. Apply 1 tsp of butter on each side. Take one bread roll and on the lower halve of the bread roll put a portion of the chinese stuffing and spread it evenly. Sprinkle 1 tbsp of fried noodles evenly over it. Close the bread roll and apply ½ tsp of butter on top of the bread and grill in a greased pre-heated sandwich griller for 5 minutes till it turns crispy and brown from both the sides. Preparation Time: 20 mins Cooking Time: 10 mins Total Time: 30 mins Makes 4 frankies Ingredients For The Roti 1/2 cup plain flour (maida) 1/4 cup whole wheat flour (gehun ka atta) 1 tsp oil salt to taste plain flour (maida) for rolling butter for cooking For Schezwan Noodle Stuffing 1/2 cup schezwan sauce 1/2 cup boiled hakka noodles 1 1/2 tbsp butter 1 tbsp finely chopped garlic (lehsun) 3/4 cup thinly sliced capsicum 1/2 cup thinly sliced carrots 3/4 cup shredded cabbage salt to taste Other Ingredients 4 tbsp chilli sauce 8 tbsp shredded cabbage 6 tbsp sliced onions 8 tbsp grated processed cheese 4 tsp chaat masala for sprinkling Method For the roti Combine all the ingredients in a deep bowl and knead into a soft dough using enough water.Divide the dough into 4 equal portions and roll each portion into a 150 mm (6”) diameter circle using a little plain flour for rolling.Heat a non-stick tava (griddle) and cook the roti using a little butter till golden brown spots appear on both the sides.Repeat step 3 to make 3 more rotis. Keep aside. For the noodles Heat the butter in a broad non-stick pan, add the garlic and sauté on medium flame for a few seconds.Add the capsicum, carrot and cabbage and sauté on a medium flame for 2 to 3 minutes.Add the schezwan sauce, mix well and cook on a medium flame for 1 minute, while stirring occasionally.Add the noodles and salt, toss well and cook on a medium flame for 1 minute, while stirring occasionally. Keep aside. How to proceed Place a roti on a clean, and dry surface.Put ½ tbsp of chilli sauce and spread it evenly.Spread 2 tbsp of cabbage over it and 1½ tbsp of onions.Spread ½ cup of the prepared schezwan noodle stuffing and sprinkle 2 tbsp of cheese over it.Sprinkle 1 tsp of chaat masala over it and roll it up tightly.Repeat steps 1 to 5 to make 3 more frankies.Serve immediately.

Keep aside.Heat the ghee in a deep non-stick pan, and add the cumin seeds.When the seeds crackle, add the green chilli and garlic and sauté on a medium flame for a few seconds.Add the onions and sauté on a medium flame for 1 to 2 minutes.Add the cooked chana dal, garam masala and chilli powder and little salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.Add the lemon juice and mix well. Keep aside. For the mini pakwans Combine all the ingredients in a deep bowl, mix well and knead into a firm dough using enough water.Divide the dough into 3 equal portions.Roll a portion of the dough into a 200 mm. (8”) diameter thin circle without using any flour for rolling.Prick it with a fork at regular intervals and cut into 8 small rounds of approx. 50 mm.
