Sicilian pie with pancetta, freshly baked #allupinmykitchen , partial payment for electrical services performed by our buddy @ryanlipot #rplelectric . I used @kingarthurflour bread flour, 68% hydration, low moisture whole milk mozz, parm, house sauce and thinly shaved pancetta. Any day now, a new plaque will be hung in Ragusa Ibla, to commemorate Jawhar al-Siqilli, a Sicilian-Egyptian general who was born in Ragusa in the year 911 AD and who and founded the city of Cairo. That city is celebrating its 1,050th anniversary this year. This is what the plaque says in both Italian and Arabic: "The life and works of Jawhar al-Siqilli are symbolic of the 'historic brotherhood' that ties our people across the Mediterranean, the sea that doesn't separate us but unites us." In recent related news, the Governor of Alexandria invited cardinal Montenegro of Agrigento to establish the first pilgrimage trip by Christian devotees from Sicily to Egypt. It’s not from concentrate, totally natural, and is made with #Sicilian #lemons, including fragrant lemon oil. As with most #foods, I make #pasta from scratch with organic eggs, sifted flour and and part semolina flour.
