An impromptu #homecooked #teochewporridge lunch today after the first round of kueh making. Had wanted to go tabao lunch after the first 2 kueh collections were completed but a friend who came to collect her kueh salat and kueh chara pandan gave me a huge slab of stingray which her friend caught. Immediate change of plans to cook it for lunch instead. A quick figuring out of my fridge and pantry, and I realised that I have almost everything I need to whip up a simple meal. The only thing that was missing was Chinese celery for the stingray dish which I rushed to the nearby supermarket to get after the kuehs are collected. Wasted no time to prep two dishes and cook the porridge cos I still have another round of kuehs to complete after that. Swatow is renowned for its unique food culture, though Teochew Dim Sum is not that commonly found here. Here are a couple of Teochew Dim Sum items from Crystal Dumplings, Siew Bee, Chives Kueh, Duck Chins (!) to Taro Orh Nee with pumpkin. After Swa Garden ended its operation last year, I have been on the look-out for similar casual Teochew restaurant serving authentic Teochew cuisine the old school way, and I think I have found one. Dishes offered on the menu of this 90-year-old restaurant (It was first started in 1930 by Boss Jimmy Koh's father as a push-cart Tze Char stall at Clarke Quay) are still prepared the traditional way. According to Jimmy, it takes a tremendous amount of time and effort but only in doing so is one able to savour how things were done in the past. His elder brother, who is in his 80s, comes to the restaurant at 5am every morning to prepare the liver rolls, prawn balls and other authentic Teochew delicacies by hand until 10am before the restaurant opens while he rests for the day. The head chef helming the kitchen is Jimmy's cousin who is 74yo this year. Jimmy explained that one of the reasons they had decided to reopen the restaurants 4 months ago was to attract and hand over their culinary skills and heritage to interested parties, especially the younger generations. None of their children are keen to take over. They have a very comprehensive menu with many rare dishes but most need to be pre-ordered. We ordered many of their signature dishes and I was quite impressed; and especially enjoyed their braised duck, scrambled onion egg with crayfish in Sambal Chili Sauce and stewed sea cucumber with minced meat stuffing. I could see sparks and enthusiasm in Jimmy's eyes when he shared with us stories about his father, the restaurant, and his collection of authentic prized ingredients. Traditional food with a story to tell always tastes better. Part 5/7 Oyster omelette and Yok Lan Gai (steamed chicken with thick sauce). Not the most picturesque but the chicken was quite all right (I prefer the one at Moi Lum). The oyster omelette turned out to be a surprise hit. I guess size matters because on a previous occasion I ordered a small size and it was pretty meh; this time though it was packed full of oysters and tasty starch. Moral of the story - just order large (if too much just da bao). Dinner at Teochew Paradise a few weeks ago! This was a special occasion so a few items were pre-ordered. To me, this is one of the better Teochew restaurants in Singapore; better than places like Chui Huay Lim Teochew restaurant. Price-wise, not the cheapest (duh), but it’s Singapore so expect to pay for good Chinese food. Part 2/7 Braised soy sauce duck and pig’s big intestines! Sigh, I wish Singapore had goose, the meat is so much more tender as compared to duck but ah well...btw of all the braised soy sauce duck I tried in Singapore, this is my favourite. Unlike a lot of places, the duck meat here isn’t tough, in fact, it’s succulent and easy to chew. Cannot be compared to the Teochew food that I eat whenever I’m in HK though, that’s a different class altogether.... Dinner at Teochew Paradise a few weeks ago! Most people may be over the salted-egg-everything phase but when I saw this { 嘻哈滿堂歡 } Salted Egg Prawns on the menu, I knew in my heart that it will be good and well, my gut feel was spot-on again! . You can’t tell from photo but the salted eggs on this was GAO (thick) but not overwhelming. Deep fried to perfection, I wish I had ordered the large portion instead of the medium. Very satisfying bite! 2. Braised #beancurd with prawns covered by egg filled gravy - deliciously cooked to be eaten on its own! 3. The rare gem #goosemeat (instead of usual duck meat) that can hardly be found in Singapore currently. A traditional Teochew version of the Oyster Omelette in this restaurant is playfully named { 子孙乐满堂 }, literally translated to mean having many grandchildren and descendants filling up the halls with joy. HAH! I guess children are now oysters!? . I love a good Oyster Omelette any time and even though the eggs were good, I didn’t like the too-much-starch part of it and I didn’t think the oysters were the best. Besides the chilli, there was another peppery dip which I’ve never seen in any other restaurant.
