I'm continuing my tour of vegan restaurants in Portland. Pictured are the spicy cucumber, shumai, and chicken adobo. The spice on the cucumbers snuck up on me. And that combined with the vinegar in the adobo had my mouth slightly on fire.

Hello friend's 👋Here's a healthy recipe of Vegan Zucchini Fritters with Dill Sour Cream by @thetastyk 💚 An easy one-bowl lunch idea made with only 6-ingredients 😋💛 ~ Follow 👉 @foodbloggerscorner for more! ~ Zucchini Fritters: 3 cups shredded zucchini (about 2 large zucchinis) 1 cup shredded carrot (about 1 medium carrot) ½ cup spring onion, finely chopped 1 cup chickpea flour 2 Tbsp ground flaxseeds + 6 Tbsp water 2 Tbsp fresh dill, finely chopped salt & pepper, to taste 1 Tbsp olive oil (for frying if pan-fried or brushing if oven-baked) 
Dill sour cream: ⅓ cup raw cashews 100g silken tofu 1 Tbsp lemon juice 2 Tbsp nutritional yeast 1 garlic clove salt & pepper, to taste 2 Tbsp fresh dill, finely chopped . Toppings: lemon zest spring onion fresh dill, finely chopped —•—Method—•— 1. Grate the zucchini and carrots as instructed. Place a sieve over a bowl and lay a cheese cloth or kitchen towel inside. Transfer the grated veggies into the cloth, add a pinch of salt and let rest for 10 minutes, then gather the ends of the cloth and squeeze out about ½ of the water inside the veggies. 2. Remove the water and place the veggies into the bowl. Add the remaining ingredients and combine with a spatula until the mixture holds well together when squeezed inside your palm. If you squeezed out too much water, add 1 Tbsp of water at a time until the mixture holds together. Then transfer to the fridge for 10 minutes. 3. In the meantime, make the dill sour cream by simply adding all ingredients (except the dill) to a blender and blending it on high speed until smooth. Add in the dill and set aside. 4. Take the fritter mixture out of the fridge and use your hands to form 10-12 fritters. Either pan-fry them in a bit of oil for 3 minutes on each side, or bake them at 175°C/350°C for 10 minutes. 5. This one pot quinoa is one of the easiest things to make. Plus it’s really tasty and healthy too. Make it on days when you’re craving something light but hot food too. Ingredients: 1. 1 tbsp olive oil 2. 2 cloves garlic - minced 3. 1 onion - chopped finely 4. 1 jalapeno/ 1 green chilli - chopped finely 5. 1/2 red bell pepper - chopped finely 6. 1/2 yellow bell pepper - chopped finely 7. 1/2 capsicum - chopped finely 8. 1 cup quinoa 9. 1 cup water/vegetable stock 10. 1 cup black beans (soaked overnight and boiled) 11. 1 tomato - grated 12. 1 cup corn 13. 1-2 tbsp chili sauce/salsa/hot sauce 14. 1 tsp chili powder 15. 1 tsp taco seasoning (if handy) 16. 1/2 tsp cumin 17. Salt to taste 18. 1 avocado, halved, seeded, peeled and diced 19. 2-3 tbsp lemon juice 20. 2 tbsp chopped coriander Method: 1. Heat olive oil in a large pan over medium high heat. 2. Add the onion and garlic and cook until soft and translucent. 3. Stir in the bell peppers, tomato and the salsa/chili sauce. 4. Slowly add the uncooked quinoa, beans, corn, chili powder, taco seasoning and cumin. Add in the water and salt to taste. 5. Cover and let it simmer until quinoa is cooked through, about 20 minutes. 6. Once cooked add the avocado, lemon juice and coriander. 7. Serve hot. . . . Himbeer nicecream. Warum Milch nicht gut ist? Weil in der Milchindustrie alle involvierten Tiere unendliche Qualen leiden und am Ende genauso sterben wie Tiere aus der Fleischindustrie. Warum gibt die Kuh Milch? Weil sie vom Menschen vergewaltigt wird, indem er ihr seinen Arm reinschiebt und das Sperma vom zuvor "befriedigten" Bullen einflößt. Hmm wird die Kuh schwanger und kann nach der Geburt des Kalbes Milch geben. Wenn wir Milch konsumieren unterstützen wir auch, dass das Kalb, falls es männlich ist innerhalb weniger Wochen nach der Geburt getötet wird. Falls weiblich unterliegt es in den meisten Fällen dem gleichen Schicksal wie die Mutter. Allerdings wird egal ob weiblich oder männlich ob beiden Fällen das Kalb innerhalb weniger Stunden von der Mutter entfernt. Das ist eine sehr schmerzhafte und traumatisietende Erfahrung für Mutter und Kind. Nach 4-5 Jahren und ca 4-5 Schwangerschaften unterliegt die Mutter dann ihren Schmerzen, gibt nicht mehr genügend Milch, hat eine schlimme Eiterentzündung und landet am Ende wie ihre Kinder auch beim Schlachter. Wusstet ihr übrigens, dass es eine erlaubte Menge an Eiterzellen in der Milch gibt? Und dass Käse im Grunde nichts als geronnener Eiter ist und Milch manchmal "weißer" gemacht wird, weil das Blut sie verdunkelt? Außerdem, dass man mich for starke Knochen und calcium braucht ist eine große Lüge. Im Gegenteil, die Länder mit dem höchsten Milchkonsum haben gleichzeitig die höchsten Osteoporose Raten. Zufall? Nein! Kuhmilch ist einfach nicht für uns bestimmt. Es ist ein Wachstumsgetränk, um aus einem Kalb in kurzer Zeit eine große Kuh zu machen. Wie sieht es bei dir aus? 🥔Potato Skins: A How To🥔 I'm sure there are tons of ways to do this, but this is our favorite 😍 Always consistent & delicious results❤️ •Wash and dry your russet potatoes. Preheat oven to 375° •Lightly oil them and sprinkle with salt and garlic powder •Poke once on each side with fork •Bake until fork tender but not tooooo soft. About 45-50 min, turning halfway •Allow potatoes to cool enough to be handled. •Cut lengthwise with a sharp knife •Using (preferably) a grapefruit spoon, gently scoop out the inner potato. Save the insides for something else (they make amazing mashed potatoes 😍) •Lightly brush the potatoes with melted butter and preheat airfryer to 380°. After it preheats for about 3 minutes, arrange potatoes on the rack (if you have one, if not that's okay but this may take longer) and set timer for 10 min (or a little less, depends on how big the potatoes are, check them at 5 min and see how they're doing). You'll have to do this step in batches, don't over crowd the fryer. Turn oven to 400° •Once all are browned, arrange in a cast iron pan (or a sheet pan), and add cheese and bacon (if you're using seitan bacon, have it already pre cooked). Cover and bake for about 10 min. Then remove cover and broil for 2 minutes to finish. •And done! Top with chives or green onions and get some sour cream to dip 😍 Swipe through for pics of the process! 🔥Have a great night!🌜

I’m going to have a whole lot of stuff to sell and donate (mostly clothes etc) and I can’t WAIT to just simplify literally my entire life. I need a reset.
