🥟 Homemade Corn & Mushroom Empanadas 📷 by @thevegansara 🚨🚨Recipe: Makes 24 to 30 empanadas DOUGH ½ cup raw cashews 1 cup potato flour ½ cup whole-wheat flour ½ teaspoon sea salt Unbleached all-purpose (or whole-wheat) flour for dusting FILLING ½ pound white mushrooms, trimmed and roughly chopped (3 cups) 1 small yellow onion, cut into ¼-inch dice 1 jalapeño pepper, seeded and finely chopped 2 medium garlic cloves, minced 3 cups fresh or frozen corn kernels 2 tablespoons white miso paste 2 teaspoons ground cumin ¼ teaspoon cayenne pepper ¼ teaspoon freshly ground black or white pepper 3 cups chopped fresh spinach Sea salt 1 cup finely chopped fresh cilantro 1 tablespoon flaxseed meal (brown or golden) Instructions To make dough, soak cashews in ½ cup hot water for 20 minutes. Transfer cashews and soaking liquid to a blender or food processor; blend until creamy. In a food processor fitted with a dough blade or a stand mixer fitted with a dough hook, combine cashew “cream”, potato flour, whole-wheat flour, salt, and 1½ cups water; mix to a smooth dough, adding water if needed to make the dough come together. Using a spatula, scoop the dough into a large bowl; let it stand for 10 to 15 minutes. To make filling, in a large sauté pan, combine mushrooms, onion, jalapeño, and garlic; sauté over medium heat for 10 to 15 minutes, stirring frequently, until the onion are translucent and the water from the mushrooms has cooked off. Add corn, miso, cumin, cayenne, and pepper; cook 5 minutes more. Add spinach and cook for 2 minutes, or until spinach is wilted. Add salt to taste. Requires a regularly cleaned aquarium with gallons of water heated to between 76-82 degrees Farenheit, a good filtration system, and enrichments such as caves, rocks, and live plants in order to thrive. Selling them in tiny bowls or cups perpetuates the harmful myth that they’re nothing more than pretty “starter pets” who should be kept solitary. In fact, female bettas can live together, and while male bettas will fight with other males, they can be placed in a “community” aquarium containing other species of fish. They’re often starved for several days during transport and are confined individually to tiny bags (third photo) that are stuffed into boxes stacked up high in massive wholesale warehouses. Many fish die before and during transport to retailers, which can take days, as they’re shipped all over the country. While some bettas are captured in the wild, the vast majority of those sold in the U.S. come from breeding farms in Thailand and other countries in Southeast Asia, where it’s common practice to keep them in small bottles (forth photo). When it’s time to pack them for transport, fish are haphazardly dumped into baskets covered with nets and scooped up into tiny plastic cups. Then, they’re packed up to be sent worldwide. In addition to being forced to endure cramped conditions, these fish are denied everything that’s natural and important to them, which can cause them to become depressed. According to Victoria Braithwaite, a professor at Penn State University who studies fish intelligence, depression is likely prompted by lack of stimulation. In study after study, fish are defying stereotypes: Some use tools, and others can recognize individual human faces. Male bettas are devoted fathers who build bubble nests for their young with their mouths and fiercely protect their babies from predators. Yet these sensitive fish continue to suffer greatly in the pet trade, where they’re subjected to inadequate care from the time they’re born until the day they die because of these cruel live conditions. This acai bowl hit the SPOT after a sweaty cross-training and abs session with @kale_n_it_karli! For the blend, I blended frozen bananas, spinach, moringa powder, blueberries, and unsweetened acai with @silk soymilk, @pb2foods pb2 and @alohamoment vanilla protein. It came out so thick and creamy! The toppings were the stars here 😍 sliced banana, @maranathanutbutters crunchy pb, @manitobaharvest hemp seeds, cinnamon, mulberries, a homemade sweet potato pb bliss ball, and a drizzle of agave ✨

Man.. I have a 3 year old. This coming from a guy who never thought he’d have a kid or have the patience to be a father. Boy have things changed. This kid has completely changed how I think about life. To be selfless instead of selfish. To sacrifice being self-seeking to being absolutely involved in another persons life. Being a parent isn’t easy, I love it, but it isn’t easy. Giving a child a good home can get you wrapped in forgetting self love, forgoing happiness, and growing comfortable with a monotonous routine. You have to find what makes you happy; you have to find your why in the aspect that your kid watches what you do at all times, show them it’s ok to love yourself too. ❤️. Happy birthday baby girl.

Pancake Breakfast‼️ ✨ I find that I feel more at ease post-meal when I know exactly what my food was made of, that's why I love preparing my own meals now from scratch. And because I believe that we all deserve pancakes for breakfast (or really, any time of the day), I wanna share this healthy, guilt-free, gluten-free, vegan pancake recipe that I've somehow perfected. It's also pretty easy to make as it uses only four ingredients! ✨ Ingredients: • 1/2 cup oat flour (whole oats pulverized with a blender) • 2 tsp coco sugar • 1 tsp baking powder • 1/2 cup almond/soy milk (preferably sweetened) ✨ 1. Sift oat flour, coco sugar and baking powder into a bowl and whisk until well-combined. 2. Pour the milk into the bowl of dry ingredients and mix. 3. Let the batter sit for about a minute while heating the pan. Grease the pan with oil if it's not non-stick. 4. Pour about 1/4 cup of the batter into the pan. Wait for the top side of the batter to bubble up before flipping. 5. Repeat step 4 until you run out of batter. Duh? 😅 6. Serve with your favorite sides. ✨ Easy right? Go make yourself healthy pancakes now and eat as much as you want without feeling guilty.
