Chickpea Spinach Stuffed Sweet Potatoes 🌱 📷: @lastingredient Recipe: Serves 4 4 medium sweet potatoes 1-15 ounce can chickpeas 1 tablespoon olive oil 1 teaspoon kosher salt 1/2 teaspoon black pepper plus more for serving 1/2 teaspoon cumin 1 cup baby spinach, roughly chopped 2 tablespoons tahini Flaky sea salt for serving Crushed red pepper flakes for serving INSTRUCTIONS Preheat the oven to 375 degrees F. Prick the sweet potatoes with a fork and roast for 45-55 minutes until they are just tender. Let the sweet potatoes cool for 5-10 minutes before halving them lengthwise and fluffing their flesh with a fork. While the sweet potatoes are roasting, make the crispy chickpeas. Drain and rinse the chickpeas. Pat them dry with paper towels. Remove any loose outer skins. In a small bowl, toss the chickpeas with 1/2 tablespoon olive oil, 1/2 teaspoon kosher salt, 1/4 teaspoon black pepper and cumin. Spread them in a single layer on a parchment paper-lined sheet pan. Bake for 25 – 35 minutes until crisp and browned, gently shaking the pan about halfway through cooking. While the sweet potatoes and chickpeas are roasting, heat the remaining olive oil in a large skillet over medium high heat. Sauté the spinach until the leaves start to wilt, about 2 minutes. Add the garlic and remaining salt and pepper, and continue cooking until fragrant, about 1 minute. Top each of the sweet potato halves with chickpeas and spinach. Drizzle with tahini and sprinkle with flaky sea salt and red pepper flakes before serving.

Since creating this page we have had many people ask us how to start eating a plant based diet. What to eat? How to commit? A lot of people think once they turn vegan they will struggle because they can’t eat or drink certain things that they love and have been consuming ever since they were young. But the thing is, there are so many options and ideas out there now! You don’t have to miss out on your favourite foods, you just need to create them into a healthier form. This diet will not only benefit you, if benefits our planet and the animals. ❤️🌎🐟🐄🐖 • You don’t need any dairy in this bowl of delicious creamy pasta, recipe and photo by @alexafuelednaturally 🙌🏼 • • Vegan fettuccine Alfredo - Serves 5-7 1 lb fettuccine noodles (or pasta of choice) 1 small yellow onion, finely chopped 4 garlic cloves, minced 1 1/2 tbsp avocado oil or olive oil 1 cup mushrooms, sliced 1 cup raw cashews 2 cups filtered water 4 tbsp nutritional yeast fresh parsley, chopped (optional) salt and pepper Bring a large pot of water to boil. Add 2 tbsp of salt to the boiling water. Add the fettuccine noodles (or your choice of pasta). Cook for 11 minutes or follow the directions on your pasta box. Meanwhile in a large pan over medium heat, add oil and sauté garlic and onions for 6 minutes. Season with a pinch of salt then add mushrooms and sauté for 7 minutes. In a high speed blender combine raw cashews and filtered water. Blend on high speed for 1 minute or until fully smooth. Pour cashew milk over mushrooms and bring heat to low. Simmer for 3 minutes, until sauce begins to thicken slightly. Add the nutritional yeast, tsp of salt and 1/2 tsp pepper to the sauce, mix then once noodles are cooked, using tongs transfer the noodles straight from the pot to the sauce. Add 1/2 cup of hot pasta water to the pasta and mix all together until noodles are fully coated with sauce. Finish off with freshly cracked pepper, a pinch of salt if needed and chopped fresh parsley. Tips: You can add vegan parmesan on top. If you would like to make the sauce a little more rich, you can add 1-2 tbsp vegan butter, so tastyyy! Lastly feel free to add any other veggies or add ins besides the mushrooms.

When I told my doc the symptoms she responded by saying: “haha, maybe it’s bc you’re vegan.” I didn’t say anything back (for once) 🤭. It wasn’t my diet, it was the virus (OBVI). Yesterday I went in to check my iron, B12 etc. My doc literally told me that my veganism saved my life bc I was so sick in my 20s. She added that she, too, is trying to eat vegan bc she believes in the science of a vegan diet. #sciencedontlie Moral of the story: I should’ve told her off when she made fun of me!
