#Repost @apinchofplants • • • • • Miso Chipotle Buddha Bowl🥢 . I love making these bowls! There aren’t any strict rules here - just add some protein, veggies, colour and texture👌. This particular combo makes a regular appearance in our house. It is super flavourful, packed with nutrients and I am ALL about the miso/chipotle flavour lately. The base is made from spinach and quinoa, piled with fresh veggies, baked tofu and topped with an amazing miso & tahini dressing. I highly suggest giving this one a try! . Tofu Marinate Ingredients: 1 block of firm tofu, drained and pressed, cut into cubes 1 tbsp of my *easy chipotle sauce (read below) 1 tbsp miso paste  1 tbsp avocado oil  1 tbsp sesame oil  1/2 tbsp agave or maple syrup  1 tbsp soy sauce . Tofu Instructions: *I have posted my easy chipotle sauce before but in case you missed it; blend two cans of chipotles in adobo sauce until smooth. You can find this at most grocery stores. Use what you need, put remaining in a freezer bag, lay flat and freeze. This way you can just break off small chucks as needed for future recipes. . Whisk together ingredients (except tofu), and marinate tofu cubes in a large bowl for at least an hour (overnight is best). In a single layer, lay tofu pieces on a parchment lined baking sheet and bake in a preheated oven at 400 degrees F for 25 mins. Flipping at the half way point. . Dressing Ingredients: 1 tbsp miso paste 2 tbsp soy sauce 2 tbsp tahini 1 lime, juiced 1 tsp agave or maple syrup 3 tbsp water Dressing Instructions: Whisk all ingredients together until smooth. . Make these super easy zucchini noodle stir fry and you won’t even realize you’re eating zucchini. Ingredients: * Zucchini - 1 (spiralized) * Carrot - 1 (cut thinly/ spralized) * Red capsicum - 1/2 cut into strips * Mushrooms - 1 cup (cleaned and cut) * Baby corn - 1 packet (cleaned, cut and boiled slightly) * Garlic - 1 tbsp * Ginger paste - 1 tsp * Black bean sauce - 1 1/2 tbsp * Soya sauce - 1/2 tsp * Oil - 1 tbsp * Salt to taste * Spring onions, mung sprouts, red chilli and peanuts to garnish. Method: 1. Heat 1 tbsp oil in a skillet, once bubbling add in the garlic and ginger. Cook quickly but make sure it doesn’t stick to the pan 2. Add in the mushrooms, baby corn and carrot with a pinch of salt. Stir for 4-5 minutes. 3. Add in the zoodles and black bean sauce and soya sauce. Cook for 5 minutes till the zucchini is soft. 4. Serve hot and garnish with peanuts, spring onions, mung sprouts and lime. In case you find the taste of black bean sauce too potent, you can add in some chilli sauce or sambal olek to balance the flavors. Vegan Ice Cream Pies with Salted Tahini Caramel and Chocolate Drizzle😱😱 Dairy free, gluten free and almost refined sugar free (minus the chocolate). For the crust I combine 1/2 cup oats, 1/2 cup walnuts, 6 pitted dates, 1 tbsp coconut oil and salt in a food processor and blend into a sticky, crumbly mixture. Press into tarte pan. The filling is • 3 frozen bananas •1/2 cup soaked cashews • 1/2 cup full fat coconut milk • 1 to 2 tbsp maple syrup (to taste) •1 generous scoop vanilla protein powder (I use @genuinehealth ) Combine ingredients in high speed blender until smooth. Pour over crust and freeze. Salted Tahini Caramel: Combine 3 tbsp tahini, 1 tbsp coconut oil, 2 tbsp maple syrup and pink salt until smooth. Drizzle over frozen pie. For the chocolate drizzle I just used melted @enjoylifefoods chocolate chips with a little coconut oil and pink salt. Keep in freezer! Improvised Pasta!⁣ ⁣ I was not in the mood to cook last night but I’m so glad I did! ⁣ ⁣ I may have used just enough turmeric for my pasta sauce to blend in with my pasta 😑 but this meal is another ‘looks ugly/bland/not great but tastes fantastic!’⁣ ⁣ Sauce⁣ • I pack of Coles brand vegan soup (broccoli and cashew)⁣ • mushrooms fried in truffle oil ⁣ • nooch!⁣ • a dollop of vegan butter ⁣ • minced garlic ⁣ • diced veggie delight vegan bacon ⁣ • Brussel sprouts (grated - this saved time!) ⁣ • pinch of turmeric ⁣ ⁣ That’s it! Super fast to throw together and I avoided driving in the rain AND avoided buying snacks for dinner! Plus I used up food that I needed to. A win all round!⁣ ⁣ I’m definitely more of a fan of cheesy (vegan) pasta sauce fan rather than a tomato pasta sauce fan (Michael’s favourite). Do you have a preference out of those two? ⁣ ⁣ Is there a different sauce you prefer with pasta? I’m always keen for new sauce ideas for lazy pasta nights!⁣ ⁣ ⁣ ⁣ ⁣ ⁣

. Flaming Snake Bean Curry (Serves 4) . Ingredients . A) 1/2 teaspoon coconut oil 1/2 teaspoon mustard seeds 1 brown onion, peeled and diced 4 cloves garlic, peeled and minced 1 red chilli, sliced 2 tomatoes, diced A dash of salt A few dashes of pepper . B) 4 teaspoons curry powder 1 teaspoon cumin 1/2 teaspoon turmeric 1/2 teaspoon fennel seeds 1 teaspoon cayenne pepper . C) 8 snake beans, sliced 1/2 red capsicum, diced 5 cup mushrooms, sliced 400 grams cooked chickpeas, washed and drained . D) 1/4 cup vegetable broth 135 ml coconut milk (cream) . Method . For A), heat oil and cook mustard seeds until these start to pop. Add the rest of A) and cook until onion is translucent. . Add B) and mix together well. . Add C) and cook until mushrooms darken. . Stir in D) and mix together well. Serve with steamed basmati rice. . Thank you for these delicious green beans that complement this curry so well 🙏. . A) 200 ml plant-based milk 2 tablespoons nutritional yeast 1 3/4 teaspoon smoked paprika 1 3/4 teaspoon turmeric 1 3/4 teaspoon wholegrain mustard 1/2 teaspoon black pepper B) 1/2 teaspoon cold-pressed extra-virgin olive oil 1/2 red onion, diced 2 cloves garlic, peeled and minced 200 grams of organic firm tofu, mashed . A handful of chives, chopped 1 spring onion leaf, chopped . Method . Mix A) together in a large bowl. . For B), heat oil and cook onions and garlic until fragrant. Add tofu and cook for a minute. Add A) mix and cook until desired texture. Stir in chives and spring onion. Served on wholemeal toast with roast sweet potato wedges and mushrooms. Add a side salad of four-lead salad, chopped kale, avocado, and cherry tomatoes. .
