Hello Eggs Benedict! So, I'm not going to lie to you. This "hollandaise" sauce is not traditional style. It has all of the lemony, eggy, buttery, creamy goodness of the typical sauce.. but it is not the same. The cauliflower changes the texture, but it actually UPS the flavour to somehow even better in my opinion! Sometimes you want a proper fatty sauce. This will not be for you on that day 😂 but if you want everything great about hollandaise plus half a serving of veggies and a change in flavour that keeps things interesting while still being amazing, try this out! I layered half of a toasted @preschoice Blue Menu english muffin, some romaine, ham, a poached egg (thank yooou egg poaching cups!), and this sauce along with a mini cucumber for a full, filling, amazing meal (that Zach gave the thumbs up on!). . 1-2 egg yolks (either would be amazing, your call if the extra protein and calories are worth the creamy goodness) 1 tbsp lemon juice 2 cups cauliflower (steamed) 3 tbsp plain Greek yogurt (optional but makes it so creamy) Salt and pepper to taste 3 tbsp melted butter Blend cauliflower and 1 tbsp melted butter until smooth. Set aside. Using a double boiler or a bowl set inside a pot with simmering water, combine egg yolks, lemon juice, and yogurt for about 5 minutes. Remove from heat, whisking constantly, for 30 seconds. Return to heat, whisking, for 30 seconds. Repeat a few times until sauce thickens. Stir in cauliflower mixture. Continue removal/return cycle a couple times until sauce thickens a bit again. Remove from heat and stir in butter, constantly whisking until mixture starts to cool. Sirloin steak with Mediterranean salad and peppercorn sauce Ingredients 1 sirloin steak (1 inch thick) 1 knob butter 1 garlic clove 1 sachet peppercorn sauce Salad (serves 2) 1/4 cucumber Bunch spring onions 1 avocado 2 tomatoes Balsamic vinegar Extra virgin olive oil Method Take the steak out 30 mins before cooking to reach room temperature whilst you prepare the salad. Roughly chop the cucumber, spring onions, avocado and tomatoes then drizzle with the extra virgin olive oil and balsamic vinegar, season with salt and pepper and set aside. Heat some oil in a pan until very hot and in the meantime rub the steak with olive oil and season well with salt and pepper. Put the steak in the pan and cook for 4 mins (for medium steak) turning every minute. For the last 2 minutes add the butter and garlic to the pan and baste the steak. Take off the pan and let it rest for 3 minutes while you heat up the peppercorn sauce in a small pan before serving with the salad.

Thai fish cakes with parmesan broccoli and cauliflower These taste unreal, low in carbs and reheat really well for lunch the next day. Scenes. Ingredients 3 packs 300g fish pie mix 1 spoon coconut oil 1/2 onion 2 chillies 2 garlic cloves 1/2 lime 1/4 jar Thai red curry paste 1 egg Broccoli Cauliflower Parmesan cheese Method Chop the fish pie mix, onion, garlic and chillies very finely and mix together in a bowl with an egg, the Thai paste and juice from the lime and season well with salt and pepper. Mix well and get ready to make the fish cakes. Fry a little coconut oil in a large non stick pan and one by one make the fish cakes and put into the pan. Fry for around 10 minutes turning a few times until they are done. In the meantime boil the broccoli and cauliflower and serve with grated Parmesan with the fish cakes.

Salmon Monday post : Healthy, delicious potato salad & salmon. Think you can’t enjoy potato salad when you are watching what you eat? Yes, you can when make some modifications to the ingredients. This is what I do when I make potatoes salad for my family . I add more vegetables to it and also use avocado dressing ,mostly. In the end I add little avocado mayonnaise or regular mayonnaise. As for myself, in order to keep it low in calories , before adding the dressing all together i take out 1 cup potato salad and add extra vegetables and make my own dressing as seen in the pictures on the post. This way instead of just having only a small portion of potato salad , i enjoy double the amount for the same calories or less . When you are watching what you eat is important to don’t feel deprived or feel hungry all the time . I always add more volume to my food with different vegetables. In my original potato salad recipe I used slightly different vegetables. Lunch today is cauliflower fried rice topped with spicy mustard! 😋 ——— I’ve been going through a spicy mustard kick- I was going to use my usual terry ho spicy yum yum sauce but I really wanted some spicy mustard so here we are! ——— Recipe: I get 1 bag of the fresh cauliflower pearls, but you could totally get frozen! I put the whole bag in a skillet and let that cook with a TBS of kikkomen teriyaki marinade/ sauce. (I don’t even factor the teriyaki in my macros bc it’s less than a carb per serving) Once the “rice” is cooked I crack two eggs in the mix. I make sure the eggs are pretty well blended and cooked and boom. I’m done. Any enchilada lovers here??? 🙋 Tag friends that must try this! 🤤 . What’s for dinner tonight? I know what I’m having! This enchilada recipe is heaven! It’s so easy, filling and delicious, I could eat it almost every day. If you watched my egg white pizza video (2 posts below), it’s a similar technique, but this is a fun and yummy twist. . . To make the enchilada. INGREDIENTS: - 1 cup liquid egg whites - About 1/3 of a cooked chicken breast, shredded - 1/4 salsa (fun fact: salsa has a third of the calories compared to enchilada sauce - 2 tablespoons of shredded cheese (I used dairy free cheese by @daiya but you can use any) - 1/4 cup of beans (optional) - Chopped cilantro & hot sauce (optional) . DIRECTIONS: - Turn stovetop to medium heat. - Spray a large skillet with nonstick spray. I recommend using a large flat griddle (typically user for quesadillas or pancakes). - Pour egg whites and swirl around so there’s a large even surface. - In the meantime, you can prepare the other ingredients or make a side salad like I did. - As the eggs begin to settle and become opaque, use a spatula to expose more liquid egg white to the pan. - Once you have a solid, large “tortilla,” slide it out onto a large surface like a cutting board and let cool. - Fill with the chicken, salsa, half the cheese, and beans and cilantro (if using). - Start by rolling in the sides, then roll up like a wrap. - Add additional salsa if you’d like and remaining cheese on top. . I had my meatloaf with steamed green beans and pepperoni chips! - I had 1.33 lbs of 93/7 ground beef, and all my ingredients in MyFitnessPal comes to 282 calories and 3.7 net carbs per serving. Can I just marvel at the little $10 jar of cashew butter first? That is expensive! Oh well, I bought it to make a cashew-banana smoothie for 9 smartpoints per serving. It was good but the banana is the predominant flavor, so I say sub in some other nut butters and play with it a bit! Next time I am adding Simply Jif instead which has fewer carbs and fewer calories! 10 minutes breakfast frittata with 1/2 medium thinly sliced zucchini, 1/2 cup cherry tomatoes & 1 Tbsp hemp seeds on top. I used 1 whole egg and 2 egg whites mixed with 1 tsp oregano, parsley, 1/4 tsp red pepper flakes ,1/4 tsp salt. Directions: Put in small nonstick pan mixed zucchini’s & tomatoes. Put over hemp seeds . Add mixed eggs. Leave the frittata in medium high heat on stove burner for 2-3 minutes ,until the edges around starts to get firm . Then transfer inside the stove. Before you take the frittata out of the pan use a spatula to loosen it all around . . I added some leftover sweet plantains when I served it. I usually like to make frittata from leftover roasted vegetables since I don’t have to cook vegetables before mixing it with the eggs but you also can used uncooked vegetables just as I did . Just make sure to slice them very thinly like I did with zucchini’s.
