Hydrate. Feel great. I'm really trying to increase my intake of water and aiming for 2 litres a day. I've been so rubbish at drinking water and at one point was literally only ever drinking Pepsi Max. Good on calories but not so great for my health. This bottle is from B and M and I love it. I fill it in the morning and pop it in the fridge. I only need to refill once to reach my goal. Coffee and chocolate in one perfect little mouthful...I may love these a little too much!⁠ ⁠ Mocha Truffles⁠ Serves: 10, Prep: 10 mins, Chill: 2 hours⁠ ⁠ WHAT YOU NEED:⁠ 3 oz. (100g) of dark chocolate, 70-80% ⁠ 1/3 cup (80ml) of full-fat coconut milk ⁠ 2 tbsp. coconut sugar⁠ 2 tbsp. instant coffee⁠ 2 tbsp. almond butter⁠ pinch sea salt⁠ 2 tbsp. cocoa powder, for dusting⁠ ⁠ WHAT YOU NEED TO DO:⁠ ⁠ Place the chocolate in bowl and heat in a microwave just until it starts to melt. ⁠ ⁠ In a small pot, heat the coconut milk, along with the instant coffee and sugar just until it’s coming to the boil. Next, whisk in the almond butter with a pinch of sea salt, and stir until smooth.⁠ ⁠ Pour the hot coconut milk mixture into the bowl with the chocolate and stir it very gently and slowly until well combined. ⁠ ⁠ Fix a layer of clingfilm right over the top of the mixture, to prevent a skin forming and chill in the fridge for about 2 hours, until firm.⁠ ⁠ Lightly dust a clean surface with cacao powder and roll a spoonful of the chocolate in it. Shape into balls and serve at room temperature. 🍝 OLIVE PRAWN PASTA 🍝 ☀️ This is one of my all time favourite “cheat” meals. I use the “” because this meal is really not that awful. It’s higher in calories than I would usually have for dinner but the ingredients are all clean and gooood. ☀️ 🌵Linguini 🌵Handful of Olives 🌵Halved Cherry Tomatoes 🌵Half a Red Onion (diced) 🌵Frozen Prawns 🌵Pinch of Chilli Flakes 🌵Basil ☀️ Start by putting the pasta on to boil. ☀️ Fry up the onion in olive oil with the chilli and some salt for a few minutes. Then add in the olives and prawns until the prawns look pretty much cooked. Finally, throw in the cherry tomatoes and fry for a couple minutes. ☀️ Mix in the cooked linguini with a little splash of the pasta water. ☀️ Top with a little basil and lol a little parmesan if you’re feeling naughty!

Cajun chicken with cauliflower rice and parmesan asparagus Ingredients (serves 2) 2 chicken breasts 1 cauliflower 1 pack asparagus tips Parmesan (grated) Cajun Paprika Chilli powder Olive oil Butter Method Season the chicken breasts with olive oil, salt, pepper, cajun and chilli powder and place in a preheated oven at 190 for 35 mins. In a separate baking tray season the asparagus with salt, pepper and olive oil and add into the oven for the remaining 20 mins, sprinkling the parmesan once ready. With 10 minutes to go grate the cauliflower and fry in butter adding salt, pepper and paprika until cooked and serve everything together. Boom 💥

Recipe, Tomato Salsa Servings: 4 people Calories: 307 kcal Ingredients Salmon: 20 ounces (560 g) skinless salmon filets (each fillet should weigh about 5 ounces or 140 g) Salt and pepper to season 3 tablespoons lemon juice divided 1 tablespoon olive oil 2 tablespoons unsalted butter 5 large cloves garlic finely chopped or minced Salsa: 3 tomatoes, finely chopped 2 tablespoons red onion, finely chopped 1 tablespoon fresh cilantro leaves, finely chopped 1/2 Serrano chile (or jalapeño), stems, ribs, seeds removed and finely chopped -- adjust to your heat preference 1 small clove garlic, crushed 1 tablespoons lime juice 1/4 teaspoon salt 1 large avocado, sliced Instructions Pat dry room temperature salmon fillets with paper towel. Season all over with salt, pepper. Squeeze 1-2 teaspoons of lemon juice over each fillet and rub in the flavour. Heat the olive in a large non-stick pan or skillet over medium-high heat until hot. Add salmon fillets, flesh side down, while pressing lightly so the entire surface of the flesh comes into contact with the pan. Sear, undisturbed, for 3-4 minutes until crispy and golden. Flip and sear the other side of each fillet for TWO minutes. Then, add in the butter, chopped garlic and remaining lemon juice. Continue to cook the salmon for a further 1-2 minutes, or until salmon reaches desired doneness, while stirring the butter and garlic around each fillet. (The butter will begin to brown slightly. YUM!) Taste test and season with salt and pepper to your tastes, and add more lemon if desired. While salmon is cooking, combine the salsa ingredients in a bowl (not including avocado).
