I decided to lacto ferment some watermelon radishes after how successful I was at fermenting red radishes. This time, I used a 5% salt water brine and added fresh ginger and smashed garlic cloves. I’ve been pretty busy the last two weeks. I realised last night (while I was up until midnight baking this birthday cake for my Dads birthday) that I haven’t posted all week! So here it is, activating nuts. Have you ever had a sore stomach or a heavy feeling after eating nuts? Raw nuts have enzyme inhibitors and phytic acid which makes them harder to digest and prevents our bodies from absorbing all the nutrients. Soaking them unlocks the nutrients and makes them easier to digest. And guess what, soaking/activating/sprouting is a form of fermentation! I soaked the cashews for my vegan frosting in filtered water with a pinch of salt overnight. In the morning I rinsed them well before blending. I had three whole slices and no upset stomach at all! 😋🙈😂 Anyone want the recipe for the activated cashew cheese frosting? 🥕🐰🍰

Finishing touches on the honey fermented charoset: According to plan, I strained out the excess honey and added the pistachios (swipe for more, notice how active that honey is!) The honey is more like a super potent liquid at this point from all the apple and ginger juice it extracted into itself over six weeks. That "honey" if we can still call it that is going into a charoset mead (fermented "honey wine") as soon as I get a couple free hours to brew. The charoset itself lived up to its name (meaning "mortar") more than any other I've ever had. Super thick and sticky, and also more delicious and intense than ever. For those who have followed this, I really wish you could try it, it simultaneously reminds me of charoset while being unlike anything I've ever tasted. I'm happy to say it has easily met or exceeded my expectations as something truly delicious and new. Stay tuned on the charoset mead!

I know I said I was going for an IPA next 🤔 then I saw this and thought I'd add it to my run if sour beers. @redduckbeer Wild Cherry. Got this as a gift from Chris when I visited the brewery recently. This is different, like really different 😮 unfiltered, unboiled, unhopped, wild fermented with fresh Morello cherries 🍒. Glad I had those other sours leading up to this, its pretty big on flavours. Aromas: Big fruity nose 👃possibly cherries (as you'd expect) still struggling with this cold, and something else I can't quite nail down. Flavour: Fruity and zesty up front, cherries and a bit of plum and something I can't nail, possibly the input of the wild ferment, sour and tart at the finish. Lots of floaties in this one, to be expected, pretty challenging, but nice. Refreshing but won't be for everyone. I'd have it again for sure 👍😁🍒🍻

As the old saying goes: "Better late than never." It's extremely relevant when referring to my Montepulciano which I harvested last Sunday (14th April). These beauties were tasting fantastic - mushroom, earth, dark plum/cherry and blackberry notes all came to mind as I was having a nosh while picking them. . I destemmed them by hand and loosely crushed before adding 40L of my 2017 Wild Ale over top of them and putting back under airlock to ferment out. The ratio ended up being roughly 30-35% fruit when expressed as w:v%. . These vines were planted in November 2017 and have thrived in the Gladstone terroir. Currently, they're untrained (bush-type habit growth) but this year I hope to put a low wire in to train them to in a kind of half-arsed attempt towards a VSP or "trellised" system. I picked 53kg (weighed in buckets, pictured) but there would've been well over 65-70kg of fruit in total - there was a bit of powdery mildew on some of the bunches which I discarded onto the ground and some of the shaded bunches hadn't reached full maturity - training will help to alleviate that.
