Fermented garlic in honey - making now for winter medicine. Couldn’t be simpler, this recipe... put cloves in jar, add raw honey, cap lightly, boom. Wait 3 months and enjoy as sickness-halting flavour bombs, or in stir fry noodle sauce, or however you roll with your garlic and honey. . This year when we harvested, we had quite a few mouldy heads of garlic - mostly just the outer layers. So I saved the cloves that I could, gave them all a good wash, and plonked them in jars topped with raw honey. You can leave the skins on, or not, as you like. . The first of the new season garlic should be popping up at farmers markets now, or just use supermarket stuff if you have to, but make a jar of this! Sauerkraut is the gateway ferment. . If you’ve wanted to try your hand at fermentation but worry you’ll mess it up, sauerkraut is a great starting point. You basically shove chopped and salted cabbage into a jar and wait for the naturally occurring lactic acid bacteria on the vegetables to do their thing—transform basic ingredients into delicious, probiotic goodness that will help keep you healthy this winter. . People regularly say to me, “Anne-Marie, I’d love to try fermenting food but I’m afraid I will accidentally poison my entire family.” Fermentation is actually extremely safe. In fact, it’s safer than many other types of food preparation. Bad bacteria—including botulinum—cannot survive the acidic environment of a lactic-acid fermentation. The good bacteria crowd them out and they die. . A lack of fancy equipment holding you back? You need only basic tools to make kraut: a jar, a knife, a chopping surface and a bowl, a grater if you want to bet fancy and shred up carrots or radishes or ginger to toss in. You can spend a lot of money on fermentation gadgets—and they likely work well—but one of the many things I love about fermentation is the simplicity. I use jars. My fanciest fermentation tools are my flip-top Le Parfait and Fido jars, which neighbors gave me (they sometimes leave them outside my door, along with the occasional head of cabbage) or I bought in thrift shops. . This purple kraut contains 2 small purple cabbages, three apples, a 1-inch piece of ginger and 1 tablespoon of salt. I started it Sunday night and it had bubbled to life by the next morning. Shroomshi is ready - Sliced some of the oyster mushrooms I collected yesterday. The mushrooms were steamed for 20 minutes then cooled off. 2 pounds bok choy 1 pound 5 oz sliced oyster mushrooms 20 garlic cloves (make a rough paste) 5-6 tablespoons somewhat mild Korean chili flakes 1 oz shredded dandelion leaves 1 teaspoon ginger powder Total weight was 3 1/2 pounds. I used 2 tablespoons of sea salt. First I mixed the salt with the bok choy and massaged tenderly for 10 minutes. Let the stuff rest for 30 minutes then repeated twice. Meanwhile the mushrooms were steamed for 20 minutes and cooled off. With my stone grinder, I crushed and made a rough paste of the garlic. When everything was ready, I simply added the chili flakes, garlic, ginger, dandelion, etc.. and mixed the mixture by hand for 4-5 minutes. Placed in a jar to ferment for around 10 days at room temperature - burp as necessary and stir the contents at least once a day. When the initial fermentation is done (no more substantial fermentation gases), I'll place it in the fridge to age for a few months. Before serving, I take a specific amount and add seasoned mountain vinegar - basically homemade manzanita (wild berry) cider vinegar infused with pine and juniper berries which is then seasoned with maple syrup and salt. You could use seasoned rice vinegar too. It becomes a mix between a ferment and a vinegar-based preserve. From students feedback, it taste awesome. Combine 1 cup diced kimchi, 2 green onion, 2 cloves garlic, a pinch of mozzarella shred, 1 egg. Boil and slice 2 sausages (I used Japanese teriyaki), lay cut sausage on bottom of oven safe dish, top w/kimchi mix, top with mozzarella shred and gochugsru. Ginger Beer A história por trás do sabor Ginger beer é o precessor dos refrigerantes modernos e apesar do nome e da aparência, Ginger Beer não é tecnicamente uma cerveja. Essa bebida refrescante e probiótica é na verdade um vinho selvagem (sem adição de leveduras exceto as presentes na matéria prima). As pessoas bebem bebidas a base de gengibre há milênios, muitas vezes em busca das suas propriedades medicinais, mas essa receita especial se tornou bastante popular na Inglaterra e na América do Norte a partir do século 18, quando a expansão agrícola que as novas colônias trouxeram, deixou o gengibre e o açúcar mais acessível na Europa. Por incrível que pareça, essa bebida feita em casa até o início da revolução industrial, era uma opção mais segura que a água disponível na época. Além do açúcar e gengibre, outros ingredientes tradicionais do Ginger Beer são limão, zimbro e ginger bug (cultura simbiótica de bactérias e leveduras presentes naturalmente no gengibre). Esses microorganismos digerem o açúcar disponível, produzindo dióxido de carbono e álcool, deixando a bebida naturalmente carbonatada e suavemente alcoólica. O Ginger Beer era armazenado em garrafas de cerâmica, no começo simples e com o tempo ganhando customização de acordo com a região em que era fabricada. Utilizando o gengibre da Jamaica, a Inglaterra exportava Ginger Beer para os EUA e Canadá, com garrafas de qualidade capazes de manter a efervescência elevada e a temperatura mais baixa. Imagine como era abrir uma bebida fermentada sem geladeira… Com a lei seca e o advento da carbonatação artificial surgiu Ginger Ale, o primo industrializado do Ginger beer, sem suas propriedades probióticas, apenas um refri de gengibre, muitas vezes só com aromatizantes. Com a industrialização e a pasteurização as bebidas probióticas acabaram se perdendo mas agora estão voltando com força total.
