Pasta Salad. Rediscovering this perfect summer lunch time meal. Easy to prep and play around with to suit personal tastes! Ingredients 4 cups cooked pasta 1/2 small red onion, finely chopped 1/4 cup sundries tomatoes, sliced 1/4 cup cherry tomatoes, sliced in half 1/4 cup kalamata olives, pitted & chopped 1 cup salad leaves 1/2 cup Parmesan, grated 1/4 cup Mozzarella balls, sliced in half 1/3 cup Italian dressing (extra points for making it yourself) Method Mix together all the ingredients, place in the fridge for at least an hour and serve! Banana Muffins. Toddler T could hardly wait to get these out of the oven. Ingredients 2 large ripe bananas 3/4 cup white sugar 1 egg 1/3 cup vegetable oil 1 tsp vanilla essence 1 1/2 cups all purpose flour 1 tsp baking soda 1 1/2 tsp baking powder 1/2 tsp salt 1 tsp cinnamon Method 1) Preheat the oven to 180C. Mash the bananas with a potato masher. Add the sugar, egg, vanilla and oil, then mix until everything is incorporated. 2) In a separate mixing bowl combine the flour, baking powder, baking soda and salt. 3) Carefully mix the wet and the dry ingredients together. Stop as soon as they are all incorporated. Grilled Courgettes. Back to reality and trying to shed some of that post-holiday weight! Thanks to their high water content courgettes are low in calories. While they will never be a super food or a powerhouse of micronutrients, however they do have a decent amount of immune system-boosting vitamin C and blood pressure regulator potassium. Recipe adapted from BBC Good Food. Ingredients 2 large courgettes, thickly sliced 1 tbsp of olive oil 50g feta cheese 1 red chilli, deseeded and thinly sliced squeeze of lemon 1 sprig of mint, leaves picked and roughly torn Method 1️⃣Brush a griddle pan with a little oil then place on a high heat. Roasted Okra Crisps. Healthy snack that strengthens your immunity against conditions like diabetes, high cholesterol, Alzheimer’s, liver disease, breast cancer and asthma. Ingredients 400g Okra (thinly sliced using a madoline) 2 tbsp olive oil 1 tsp garlic powder 1/2 tsp salt Method 1) Heat the oven to 180 C fan assisted.
